Beer Reviews: Ales

Ales are brewed using a top-fermenting yeast (i.e. the yeast floats on the surface of the beer as it is fermenting). The fermentation process for ales occurs at a warmer temperature than, say, for lagers, thereby increasing the speed of the fermentation process (remember biology class? the cultures you stuck in the cold, cold fridge didn't do too much, but the ones you left by the heater were going like gangbusters!). What does this mean in the end? Fruity flavors, ideally, along with a generally more complex flavor to the beer. To make a cigar analogy, these are the maduro robustos of the beer world -- strong and jam-packed with lots of taste!
