Preservation
the safe-keeping of food and drink for extended periods of time



With the lack of refrigerating technology, food preservation basically was refraining from killing or preparing food until it was ready to be eaten. At times of harvest, however, much of the food had to be collected to supply people through the winters until they could start growing food again. Meat was often preserved by salt. It was either buried in ground salt, or the meat was marinated in a salt solution. Before eating, the meat was washed clean. Meat could also be smoked to be preserved.
