Soup and Stir Fried Squid
Topic: Squids
My mother's favorite way to cook large squids, she sauteed the squids first with large amount of water and some spices, then she took out the squid's meat from the broth to stir fry it with other ingredients. I like this style of cooking and sometimes I did it also with beef and chicken.

Ingredients:
500 g squid, large variety, sliced thinly
1 pinch of turmeric powder

For the broth:
1 medium onion, sliced thinly
1 thumb-sized ginger, crushed
2 cloves garlic, crushed
1 medium ripe tomato, sliced thinly
1 tsp. whole peppercorn
1 long green pepper
Fish sauce
Water
salt and pepper to taste
1/2 tsp. sugar
1 tbsp. cooking oil

For Stir Frying:
2 cloves garlic, crushed
1 medium onion
1/2 cup mixed vegetables (carrots and green peas)
2/3 cup corn kernels, drained
Light soy sauce to taste
3 tbsp. oyster sauce
1/2 tsp. sugar
black pepper powder to taste
2 tbsp. cooking oil
1 tsp. sesame seed oil

Directions:
For the Broth
1. Mix turmeric powder and squid.
2. Heat oil in a pot, saute garlic until slightly brown, then add onions, ginger and tomatoes, saute until tender.
3. Add water and peppercorns, let it boil. (the secret of boiling water first is to soften the squid)
4. When the water boils, add squid and the rest of broth ingredients. Cook for 3 minutes.
5. Take out the squids' meat from the broth.

To Stir Fry:
1. Heat oil in a pan, saute garlic until slightly brown, then add onions, stir.
2. Stir in the squids, mixed vegetables and corn kernels.
3. Season with light soy sauce, black pepper powder and sugar. Add oyster sauce and cook for few seconds.
4. Turn off heat, stir in the sesame seed oil. Serve.

Squid Adobo
Topic: Squids
There are many variations of squid adobo, however this is my favorite one.


Ingredients:
500 g squid, cleaned and sliced into rings
1 cup water
1/3 cup vinegar
1 tsp. whole peppercorns
1/2 tsp. salt
1 medium onion, sliced thinly
3 cloves garlic, crushed
1 tbsp. grated ginger
1 ripe tomato, sliced thinly
1 tbsp. light soy sauce
2 tbsp. oyster sauce
1 stalk green onion,cut into 1 inch length
3 tbsp. cooking oil
1 stp. sesame oil (optional)

Directions:
1. In a medium pot, bring water to a boil along with the vinegar, squid and salt until the squid is cooked. Drain and set aside.
2. In a separate pan, saute garlic in hot oil until slightly brown. Add onions, ginger and tomato, saute until the tomatoes are tender.
3. Add the squid and the rest of the ingredients except green onion and sesame oil. Stir to mix well and cook for 1 minute.
4. Add green onions. Stir for few seconds. Turn off heat. Stir in the sesame oil. Serve hot.

Squid with String Beans
Topic: Squids
This is one of my simpliest recipe to cook squid with vegetables. Very easy and simple.



Ingredients:
500 g medium squid, sliced into rings
10 pcs. string beans, cut into 2 inches length
1 medium carrot, sliced into strips
1 medium onion, sliced thinly
1 tbsp. grated ginger
1 ripe tomato,sliced thinly
1/3 tsp. black pepper powder
2/3 cup water
1 tbsp. light soy sauce
1 tbsp. dark soy sauce
1/2 tsp. sugar
salt and pepper to taste
3 tbsp. cooking oil
1 tsp. sesame oil

Directions:
1. Heat cooking oil in a pan, saute onion,ginger and tomatoes for 3 minutes or until tender.
2. Add squid rings, string beans and carrots, stir for 1 minute then add water and the rest of the ingredients except sesame oil. Adjust the seasoning according to your taste. Simmer until the vegetables are done.
3. When the vegetables are done, turn off heat and stir in the sesame oil. Serve.

Grilled Squid

We used to eat medium-large squids (white variety) in Philippines everytime we dine at any seafoods restaurant in Iligan, Cagayan or Davao and I really miss those squids. Unfortunately I cannot find that kind of squids here in Kuwait, I stayed here for more than 4 years and until now I did not able to see it yet in the fish markets here. All they have here are the pink variety (not so large), and one very large variety, the thick one, I forgot the real name of this squids which I cooked it this way and this way and this way and also this way. LOL :)



Ingredients:
Medium squids
1 medium onion, minced
2 tbsp. crushed ginger
1/4 tsp. garlic powder
3 tbsp. soy sauce
1 tbsp. lemon juice
1 tbsp. olive oil
1/4 tsp. black pepper powder
Sesame oil (optional)

Directions:
1. Mix together onion, ginger and garlic powder.
2. Make some slits at the squids' belly horizontally. Insert few amount of onion mixture to each slit.
3. In a small bowl, mix soy sauce, lemon juice, olive oil and black pepper powder.
4. Brush each squid with few amount of soy sauce mixture.
5. Grill over medium heat brushing occassionally to avoid drying until done.
6. Brush each squid with the sesame oil. Serve over Lettuce Salad if desired.

Tips: Marinate the squids with 7-Up and few amount of soy sauce for an hour before grilling and see or taste the big difference!

Squid with Coconut Milk
Topic: Squids
I introduced this recipe to my hubby during the early years of our marriage and he really liked it, from that day, whenever we bought medium squids, he requested me to cook it this way or to fry it.



Ingredients:
500 g medium squid, sliced into rings
1 cup coconut milk powder
2 tbsp. oyster sauce
1 tbsp. light soy sauce
1 medium onion, sliced thinly
1/4 tsp. black pepper powder
2 tbsp. cooking oil
Few vegetables of your choice (optional)

Directions:
1. Combine squid rings, coconut milk powder and oyster sauce, blend well. Set aside.
2. Heat oil in a pan, saute onions for few seconds, add vegetables and light soy sauce. Cook until vegetables are half done.
3. Add the squid and coconut milk mixture. Mix together, add the black pepper, cook over medium heat for 5 minutes, adjust the seasoning. Turn off heat and serve.
