Naked Fried Shrimps
Topic: Shrimps
As what they said, sometimes simplier is better, this recipe was cooked in a very simple way. I named it naked fried shrimps since the shrimps were being peeled then fried as it is, no batter, no breadcrumbs.



Ingredients:
Shrimps, peeled and deviened
salt and pepper to taste
green onions, sliced into 1 inch length
1 tbsp.light soy sauce
1 tbsp. lemon juice
1/4 cup cooking oil

Directions:
1. Season shrimps with salt and pepper and set aside for 10 minutes.
2. Heat oil in a skillet, fry the shrimps over medium-high heat until the color changes to pink. (fry batch, don't over-crowd the skillet).
3. Drain on paper towels. Add the green onions.
4. Combine the ligth soy sauce and lemon juice, pour the mixture over the shrimps. Serve.

Spicy and Crispy Deep Fried Shrimps

Here's another variation of deep fried shrimps. Spicy! Yummy!



Ingredients:
1/2 cup tempura flour
1 cup coconut milk
1/3 cup cold water
1 1/2 tbsp. curry paste
2 pcs. lemon leaves, chopped very thinly
1/3 tsp. salt
pepper
Medium Shrimps, peeled leaving the tails on, deviened
Breadcrumbs
Oil for deep frying

Directions:
1. Combine the first 7 ingredients together in a bowl. Blend well until smooth.
2. Hold each shrimp's tail and dip it into the batter, then dredge it into the breadcrumbs until fully covered.
3. Deep fry in hot oil over medium heat until golden brown. Drain on paper towels. Repeat procedure until all shrimps are done.
4. Serve with sweet chili sauce or any dipping sauce you like.

Shrimp with Brocolli

I forgot that I bought brocolli last week and I just noticed it yesterday in the fridge, luckily it was still crispy and not dried out yet, so that's why I cooked this dish immediately.



Ingredients:
400 g shrimps, peeled, leaving tails on
1 medium head of brocolli,cut into florets
1 cup shrimp broth/water
1 onion, sliced thinly
3 cloves garlic, minced
2 tbsp. grated ginger
1 tbsp. cornstarch
2 tbsp. cold water
2 tbsp. oyster sauce
1 tsp. sesame seed oil
1/4 tsp. black pepper powder
1/2 tsp. sugar
salt and pepper to taste

Directions:
1. In a small bowl, combine cornstarch, 2 tbsp. water and oyster sauce. Set aside
2. Heat oil in a pan, stir fry the shrimps until the color changes, then add gralic, onion and ginger, stir for about 1 minute. Add salt, pepper, black pepper and sugar.
3. Add brocolli and broth,let it boil and cook until the brocolli are almost done, about 2 minutes or depending upon your desired tenderness.
4. Add the cornstarch and oyster sauce mixture. Blend well. Cook for few seconds or until the sauce are thick and clear. Turn off heat.
5. Stir in the sesame seed oil. Serve.

Shrimps with String Beans, Squash, etc.

My hubby loves any dish with coconut milk that's why whenever we shopped for our groceries, it wouldn't be complete without coconut milk on it. I cooked this dish last night because I knew he likes it. Shrimps, string beans, squash and coconut milk, combine together, then served with some grilled fish, ooh... it would be a nice meal for him. I love you Honey...



Ingredients:
500 g medium shrimps
2 cups, sliced squash
10 pcs. string beans, cut into 2 inches length
2 cups coconut milk
2 cups broth
1 onion, sliced thinly
2 tbsp. grated ginger
1 ripe tomato, quartered
1 tbsp. fish sauce
1/2 tsp. sugar
4 pcs. kaffir lime leaves
salt and pepper to taste

Directions:
1. Put squash, onion, ginger and broth in a pot. Let it boil until the squash are tender.
2. Add string beans and kaffir lime leaves, simmer for 4 minutes.
3. Add the coconut milk, shrimps, tomato, fish sauce and sugar. Bring to a boil, season with salt and pepper. Cook until the shrimps are done. Serve.

Shrimps, Tomatoes, Oyster Sauce, etc.

My hubby said he liked shrimps sauteed with more ripe tomatoes and oyster sauce, that's the reason why I cooked this dish. When I made this dish, I sauteed all spices and ingredients first, the last thing I added was the shrimps, I just cooked the shrimps for a minute or less (it was like half-cooked) and my hubby seems very pleased yesterday! lol :)



Ingredients:
500 g medium shrimps, trimmed
3 large ripe tomatoes, chopped
1 onion, sliced thinly
2 tbsp. grated ginger
1 red capsisum, cut into strips
1 green capsicum, cut into strips
3 cloves garlic, minced
1/3 cup oyster sauce
2 tbsp. soy sauce
1/4 tsp. black pepper
1/4 tsp. coriander powder
1/2 tsp. sugar
2 tbsp. cooking oil
salt and pepper to taste

Directions:
1. Heat oil in a pan, saute garlic, onions, ginger and tomatoes until the tomatoes are very tender, about 3-5 minutes.
2. Add all the inggredients except shrimps. Stir and mix well. Cook for 3 minutes.
3. Add the shrimp, stir to mix well until color will turn pink, cook for 1 minute more or less, depending upon your own taste. Serve immediately.
