Chicken Adobo Fried Rice with Asparagus
Topic: Rice
The idea of turning the Chicken Adoboleftovers into fried rice came into my mind because of my hubby's way of eating his rice whenever we had adobo at home. When I transferred all the cooked adobo into the platter, he put his rice into the pan and let the remaining adobo sauce blends with it. So, I said why shouldn't I try making adobo fried rice, anyway.


Ingredients:
2 cups cold cooked rice
About 6 pcs. chicken adobo or more
3 cloves garlic, minced
1 medium carrot, cubed
1 chicken franks
12 pcs. fresh asparagus, cut into 2 inches length
1/4 cup oyster sauce
1 egg, beaten
3 tbsp. cooking oil

Directions:
1.Heat few amount of oil in a wok. Add and cook the beaten egg until lightly brown. Flip to cook the opposite side. Transfer into a flat dish or chopping board, roll and cut thinly. Set aside.
2. Heat remaining oil in wok, stir fry the carrots cube for 1 minute. Add garlic, stir for few seconds, then add chicken franks and chicken adobo. Mix and stir for 30 seconds. Add oyster sauce. Stir.
3. Add rice, stir until the rice is heated through.
4. Turn off the heat and add the cooked egg. Transfer to a dish and serve.

Mushroom and Raisins Pilav
Topic: Rice
Pilav or Pilaf is a Middle Eastern and Central Asian dish in which a rice is first browned in oil and then cooked in a seasoned broth. Sometimes it also contain variety of meat and vegetables. I always tried my best to cook this kind of dish at home for trial and error cooking and fortunately I learned a lot from my experiments. For the past 2 years, I cooked many variations already before I started this blog and unfortunately everytime I cooked it after I started this blog, either I got a blurred image :D or my camera run out of battery, so I did not able to take a photo of it, lol! I also cooked this dish during my vacation last year, my family and relatives there love it. Sometimes, I just cooked it plainly with butter and onions only or with mixed vegetables (carrots and green peas), in this post I used mushrooms and raisins.

Ingredients:
3 cups long grain rice (basmati rice)
3 medium onions, thinly sliced
2 tbps. grated ginger
1 bellpepper, chopped
1 cup mushroom, sliced
1/2 cup golden raisins
4 1/2 cups chicken broth
1/3 cup melted butter
1 tsp. salt
1/2 tsp. black pepper powder


Directions:
1. Wash the rice, then drain for 10-15 minutes.
2. Heat 1 tbsp. of butter in a cooking pot, stir fry mushrooms for few minutes or until tender. Take out from the pot and set aside.
3. On the same pot, add the remaing butter, stir fry the rice until slightly brown, about 3-5 minutes.
4. Add onions, ginger and bell pepper. Mix well and stir for 2 minutes.
5. Add chicken broth and salt, bring to a boil and simmer until the liquid are reduced.
6. Cover the pot, lower the heat and cook for 20 minutes.
7. Transfer to a rice dish and mix in the mushrooms, raisins and black pepper powder. Serve.

Rice with Sprouts and Dried Shrimps
Topic: Rice
Very simple fried rice and quick to prepare also. Sorry the picture is not so clear, anyway it taste so good even the pic is blurred. lol :)


Ingredients:
3 cups cooked rice
2 cups mung bean sprouts
2/3 cup dried tiny shrimps
2 stalks green onions, separate the white part, chopped
3 tbsp. oyster sauce
1 egg, beaten
3 tbsp. cooking oil

Directions:
1. Heat half of the oil in a wok, add the white part of green onions, saute, add dried shrimps and stir for few seconds, then stir in sprouts. Cook for 2-3 minutes. Transfer to a platter and set aside.
2. Heat the remaining half of oil to the wok, add the cooked rice, stir until heated through.
3. Add oyster saue, mix well.
4. Add beaten egg, stir for 2 minutes.
5. Turn off heat. Add the 2/3 of shrimp mixture and green onions to the rice. Mix well.
6. Transfer to a platter and garnish with the remaining shrimp mixture on top.

Vegetable Fried Rice

I was out of mood to cook last night since I was not quite feeling well, hence I just plainly broiled the fishes. And since we have lots of rice leftovers, I fried it with lots of vegetables so that I cannot cook vegetbales anymore. I thought it will not go well with the broiled fish but I was wrong. This is really good for vegetarian.


Ingredients:
4 cups cold cooked rice
1 medium onion, sliced thinly
1 medium ripe tomato, sliced thinly
1/2 cup baguio beans, thinly sliced
1/2 cup carrot, sliced into small cubes
1/2 cup frozen corn kernels
1/2 cup brocolli, cut into small florets
1 cup shredded cabbage
light soy sauce, to taste
3 tbsp. cooking oil
1 egg, beaten
1 stalk green onions, cut into 1 inch length

Directions:
1. Heat few amount of oil in a wok. Add and cook the beaten egg until lightly brown. Flip to cook the opposite side. Transfer into a flat dish or chopping board, roll and cut thinly. Set aside.
2. Heat the remaining oil in a wok, saute the onions and tomato until tender.
3. Add all the vegetables and stir to mix well. Season with light soy sauce. Cook for about 2-3 minutes.
4. Add rice to the mixture, stir until the rice is heated through.
5. Turn off the heat. Transfer to a platter and garnish with the green onions and the cooked egg.

Spaghetti Sauce Fried Rice
Topic: Rice
This dish looks very common but what made it different from the fried rice that I made before was the spaghetti sauce I added on it. We ate spaghetti the other day late afternoon and we did not able to consume all the sauces. I don't want to throw it, sayang, then I saw that we had also cooked rice leftovers, then an idea came into my mind, frying the rice with the spaghetti sauce! Sounds good, I regret why I did not able to think that before, we always had spaghetti sauce leftovers and I never knew that they are great for fried rice! Now, I already know what to do with it if we will have some leftovers again.


Ingredients:
3 cups cold cooked rice
2/3 cup Spaghetti sauce
1 medium onion, sliced thinly
2 cloves garlic
1 tbsp. fish sauce
1/2 cup frozen mixed vegetables (corn, carrots, green peas)
2 tbsp. cooking oil
salt and pepper to taste

Directions:
1. Het oil in a wok, then saute garlic until lightly brown, add onions and stir for few seconds.
2. Add the mixed vegetables. Mix and stir for few seconds.
3. Add rice, stir to mix well with the rest of the ingredients.
4. Pour in the spaghetti sauce, mix well. Season with fish sauce, salt and pepper. Cook and stir for 3-4 minutes. Serve.
