Grilled Chicken at the Seaside

 It was our office day-off for 2 days, it was National Day and Liberation Day in Kuwait, so we went to the seaside for the 1st day to take our lunch there, the climate now in Kuwait is perfect for outdoor grillings. We grilled some chicken and seafoods there. The image at the left is some of our grilled chicken that day, we just marinated it in a native Moro dish way, with turmeric powder, lemon juice, soy sauce, black pepper, crushed ginger, pounded onions and more more chopped red peppers.Hmmm...yummy!

Empanada

I made this empanada few days ago but I have no time to post it here until now, I'll just post the recipe later. 
Hubby's Chicken and Potato Soup with Coconut Milk

It was my hubby's schedule to cook again for dinner, he didn't cook his favorite Chicken with Milk recipe that night, what he prepared was a chicken and potato soup with coconut milk. Here is it: 
Ingredients: 500 g chicken, sliced into serving portions 2 mdium potatoes, sliced into cubes (about 1x1 inch) 1 medium onion, sliced thinly 1 thumb-sized ginger, crushed 1 medium ripe tomato, sliced thinly 4-5 cups chicken broth or water 2/3 cup thick coconut milk long green peppers salt and pepper to taste 1/2 tsp. sugar 1/4 tsp. turmeric powder (optional but recommended)
Directions: 1. Combine turmeric powder and chicken slices, mix well. 2. In a medium pot, combine chicken broth or water, onion, tomato and ginger, let it boil. 3. Add chicken slices and potato cubes, let it boil. Add salt, peppers and sugar. Simmer until the chicken and potatoes are tender, about 20 minutes. 4. Add coconut milk, cook for 2-3 minutes. Serve.

Hot and Sour Fish with Coconut Milk

We had these small fishes ( the one in the pic) at home which I didn't have too much ideas on how to cook with it, I tried to cook it in many variations already like, frying, stewing, sauteeing, paksiw, etc., so last night I wanted to cook it differently. The idea was derived from my Tuna Adobo in Coco cream that I posted few months ago. It is a combination of hot (pepper) and sour (vinegar) cooked in thick coconut milk. 
Ingredients: 500 g fishes, cleaned 1/3 cup vinegar 2 stalks green onions, sliced 2 thum-sized ginger, crushed 1 ripe tomato, sliced thinly 3 cloves garlic, crushed soy sauce to taste 2/3 cup water 2/3 cup thick coconut milk long green pepper to taste salt to taste 3 tbsp. cooking oil
Directions: 1. Soak fishes in vinegar for 10 minutes. Drain. 2. Heat oil in a pan, brown crushed garlic, then add green onion, tomato and ginger, cooked until tender. 3. Add fishes and all the remaining ingredients. Cook for 5-6 minutes or until done. Serve.

Assorted Pastillas

When we were in college, my cousin Mors taught me the basics of cooking desserts like cassava cake, kutsinta and Milk Pastillas, however I forgot the exact measurements, so when I made this pastillas yesterday, I did not able to finish it quickly eventhough it was very easy to prepare because I was experimenting the measurements like adding condensed milk again when the texture was so rough then adding milk powder again when it became too moist and so on until I reached the good texture. I take note the measurements every time I added an ingredients so that by the time I will make again, it will not be an experimentation anymore. When I was finished, I devided the mixtures into 3 parts, first part was a plain milk, I added chocolate powder to the second part and ube jam to the third part, hence, I ended up having assorted pastillas. 
Ingredients: 1 cup milk powder 1/2 cup condensed milk 2 tbsp. chocolate powder (I used Cadburry choco. powder) 1 1/2 tbsp. ube jam 1 tbsp. milk powder 1/2 cup white sugar butter cooking spray
Directions: 1. Mix 1 cup milk powder and condensed milk in a bowl. Blend well until smooth. 2. Divide the mixtures into 3. Set aside the first part. 3. Add chocolate powder to second part, stir and mix well until the chocolate are blended well with the mixture. 4. Add ube jam and 1 tbsp. milk powder to the other part, stir and mix well until smooth. 5. Cover a tray's surface with the 1/2 cup sugar. 6.Grease a flat surface (I just used large and flat dish) with the butter spray. 7. Take a small amount from the mixtures and roll it in the lightly greased surface until you meet your desired sizes. (I made it almost like a size of a regular pencil). Then, cut it uniformly about 1 1/2 inch length. Place the cut pastillas into the tray with sugar, roll to cover the surface and avoid sticking. 8. Repeat no. 7 until all the mixtures are done. That's it!
