Chicken Sandwich

I want to make sandwich for our Iftar yesterday but I have no idea what kind of sandwich should I make, fortunately there were chicken leftovers from the KFC chicken that we ate the other day so I flaked it and I got more than I wanted for the sandwich.


There were also still chicken luncheon in the cabinet, so my problem was solve. I add 1/2 cup mayonnaise, 1/4 cup thousand Island dressing, 1 tbsp. chopped onions, 2 tbsp. chopped tomatoes to the 1 cup chicken flakes. I mixed it all in a bowl and season with salt, pepper and few sugar.
Then, I sliced the chicken luncheon into very thin portions, soaked it it beaten egg and fried it in buttered hot pan. I also sliced some cheddar cheese as thin as the luncheon, I plan to include it in the sandwich. This is how I made the sandwich, I spread 1 tbsp. of cream cheese to the one side of the bread,put 2 slices of luncheon on it and some slices of cheddar cheese. I cover it with another bread and spread the surface with the chicken and mayo mixture and cover it again with another bread. I repeat this procedure until all the bread slices are done. Then, sliced the sandwich into 4 parts diagonally, arrange it in a platter and put it in microwave oven for 1 minute before serving, and that's it!

Garlic Bread

Why pay more for a very simple garlic bread when you can do it at home? Here's the basic recipe, you can adjust it depending upon your taste. You can add some herbs like parsley or oregano to add more taste, but I always prefer the plain one. This is what we always cook at home when we ate spaghetti or some noodles.



Ingredients:
1 baguette bread, sliced diagonally 1/2 inch thick
1/2 cup butter, melted
2 cloves garlic, minced
1/2 tsp. garlic powder
1/2 tsp. sugar
1/4 tsp. salt
grated mozzarella cheese

Directions:
1. Combine butter, sugar, salt, garlic powder and fresh garlic.
2. Brush each side of the bread with the butter mixture.
3. Arranged the bread in an oven dish and bake in a preheated oven for 3 minutes.
4. Take out from oven, flip the bread and put some grated cheese on it.
5. Return to the oven and bake for 1 minute or until the cheese melts.

Serve with Spaghetti or Pancit Canton

Banana Cake

There were ripe bananas left when we ate this afternoon and my husband requested me to make it a cake but I was little bit busy last night so I asked my sister Jong to make it, I taught her few months ago how to make one and this is the one she baked last night. We did not able to eat it all so we brought some slices in the office this morning.



Ingredients:
2 pcs. ripe banana, mashed
2 cups all-purpose flour
1 1/2 cup sugar
1 egg, beaten
1 eggyolk, beaten
3/4 cup milk
1/2 cup butter, melted
1 tsp. baking powder
1 tsp. baking powder
1/2 tsp. salt
1 tsp. vinegar
1 tsp. vanilla
1/3 cup raisins

Directions:
1. Combine flour, salt, baking powder and baking soda.
2. Cream sugar and butter, add eggs,milk and vinegar. Add the flour mixture and mix together using hand mixer until well blended.
3. Add vanilla and raisins. Mix.
5. Transfer the mixture into buttered and floured cake pan. Bake in a preheated 200 degree oven for 40 minutes or until done.

Coconut Muffins

I made this recipe as an experiment, this is almost similar to the Puto Cheese, the only big difference was the method of cooking, this was baked while the Puto Cheese was steamed. My first plan was to make Bibingka, my brother Zul said he miss eating Bibingka a lot but we don't know how to make it. I know the ingredients but I am not sure about the measurement. I said I will try to experiment using all-purpose flour instead of rice flour, the result, it turned into a muffins! Now, I called it Coconut Muffins. LOL!



Ingredients:
3 cups flour
2 cups thick coconut milk
1 1/4 cup white sugar
4 eggyolks
5 tbsp. baking powder
1/2 tsp. salt
grated cheese
Margarine

Directions:
1. In a bowl, combine all ingredients except cheese and margarine. Mix all together until well blended.
2. Place enough amount of batter in a paperlined moulder, sprinkle grated cheese on top and bake for 20 minutes in a preheated 375 degree oven.
3. Take out from oven and rub margarine to the surface.
4. Serve warm.

Apple Sauce Cake

Wondering what to do with the unused apple sauce in the fridge last night, I came up an idea of making a cake, actually that was my first time to make an applesauce cake. As usual, I tried experimenting again, I add some dates and cashew nuts because we have lots of it at home, it might be expired so better do something from it. Throwing foods is not my habit, lots of people out there have no foods. Now back to the cake, unfortunately it was almost overcooked when I baked it because I mistakenly setted the oven temperature, I baked something 2 days ago with high temp. and I did not able to adjust it last night when I baked the cake. I went to te bedroom after putting it in the oven, then after a while my husband asked me if I'm baking something because he smelled it, I hurriedly went back to the kitchen and saw that my cake was almost burned! (see the pic, :)!) Still delicious, though!



Ingredients:
3 cups flour
1 1/2 cup sugar
2 cups applesauce
1 cup milk
3 eggyolks, beaten
2 tsp. baking soda
1 tsp. salt
1 tsp. baking powder
1 cup butter, melted
1/2 cup dates, chopped
1/2 cup cashewnuts, chopped or ground

Directions:
1. Preheat oven to 375 degrees. Butter and flour cake pan.
2. Cream together sugar and butter. Blend in eggyolks and apple sauce. Add milk.
3. Add flour, baking powder, baking soda and salt. Blend thoroughly.
4. Add dates and cashewnuts. Blend.
5. Pour into prepared cake pans. Bake until done.
