Vegetable Chow Mein

Chow mein is an American Chinese stir-fried dish consisting of noodles, meat, chicken and vegetables. It is often served as a specific dish at westernised Chinese restaurants with soy sauce and some other spices. The first tasty chow mein that I tried was from a Chinese Restaurant in Jabriya, Kuwait, it was purely Beef Chow Mein with no vegetables added and it made my husband asked for more! It has only few noodles, 1/3 noodles and 2/3 beefy sauce. I also tried their vegetable chow mein and wow, very delicious too! That was almost 3 years ago and we did not visit there again, I just cooked it home. It taste almost the same or let me say perfectly the same, I dare say! I always cooked this recipe whenever we held a party at home and there were no leftovers even a single strand of noodles.



Ingredients:
200 g dried egg noodles
1 cup, chicken flakes
15 pcs. baby corn, cut 1 inch length
2/3 cup mushrooms, sliced
1 carrot, sliced into strips
1/4 head of cabbage, slice very thinly
1 green bell pepper, sliced into strips
2 onions, sliced
4 cloves garlic, minced
1/4 cup black fungus, soaked in water and sliced
2 cups chicken broth
1/4 cup soy sauce
3 tbsp. oyster sauce
1 tbsp. cornstarch, dissolved in 2 tbsp. water
1 tsp. sugar
2/3 tsp. black pepper powder
2 tbsp. sesame seed oil
3 tbsp. cooking oil
2 stalks green onions, chopped
salt to taste

Directions:
1. Combine dissolved cornstarch and oyster sauce.
2. Heat oil in a pan, stir fry the chicken flakes until golden brown, stir in the garlic and onions. Add soy sauce, stir.
3. Add carrots, corn, mushrooms, black fungus and broth. Bring to a boil.
4. Add add noodles, cabbage and bell pepper. Mix well. Add black pepper and sugar. Stir until all the vegetables are well incorporated with the noodles.
5. Pour in the cornstarch and oyster sauce mixture. Stir and cooked until the noodles are tender and liquids are no longer cloudy.
6. Remove from heat, stir in the sesame seed oil and garnish with the chopped onions.

Pancit Canton

Pancit canton or sauteed egg noodles is a Chinese dish which is very popular in the Philippines. It is usually cook with meat, chicken or shrimps and varieties of vegetables. Here in Kuwait, it is very hard to find good fresh egg noodles, some are very oily and salty that's why I preferred to buy the dried one. It taste almost the same, it depends upon how you cook it. It usually served with toasted bread, siopao, etc. but we usually ate it with Garlic Bread.



Ingredients:
200 g Cantonese Noodles
2/3 cup beef, sliced into strips
2/3 cup chicken breast,sliced into strips
2 chicken franks, sliced
1 small head brocolli, cut into flowerets
1 medium carrots, slice into strips
1 cup snow peas
2 cups cabbage slice into strips
1 large onion, chopped
3 cloves garlic, chopped
1/3 cup black fungus, soaked in water and sliced
1 tbsp. fish sauce
3 tbsp. soy sauce
2 tbsp. oyster sauce
1 tsp. black pepper powder
3 cups water
3 tbsp. olive oil
1 tbsp. sesame seed oil
chopped green onions for garnish

Directions:
1. Boil beef and chicken in 3 cups water until done. Remove from the pot and reserve the broth.
2. Heat oil in a pan, saute garlic and onion.
3. Add in beef, chicken and chicken franks, stir. Stir in the black fungus, fish sauce and black pepper. Simmer for 5 minutes.
4. Add the reserved broth, carrots, brocolli and soy sauce. Bring to a boil.
5. Add noodles, snow peas and cabbage and cook until done.
6. Season with oyster sauce, sesame seed oil and pepper. Garnish with the chopped onions.

Bihon Guisado

Friday is my office whole day-off and it is the only day of the week that I have a chance to wake up late but I cannot do it because my appetite is urging me to get up. Yeah, I felt hungry because I am used of eating breakfast early for 6 days of the week. Hence, I have no choice but to get up and see what's there in the kitchen to munch! I decided to cooked Bihon Guisado since it's been a long time that I did not eat it.
Bihon is a rice noodles, it's a kind of Chinese food that being adapted by the Filipinos. Here in Kuwait, it's very hard to find a good quality Bihon but we still manage to cook it whenever we missed eating this noodles.



Ingredients:
200 g dried rice noodles
200 g chicken breast, flaked
200 g shrimp, peeled leaving tails on
1 medium size carrot, cut into strips thinly
2/3 cup baguio/green beans, slice diagonally and thinly
1/4 head of cabbage, shredded
1 medium size bell pepper
2 tbsp. minced garlic
1 large onion, minced
1/3 cup soy sauce
3 tbsp. cooking oil
1 cup of chicken/shrimp broth
pepper to taste

Directions:
1. Soak the rice noodles in cold water for 5 minutes, drain. Cut into 3-4 inches length
2. Heat the oil in a skillet. Saute garlic and onions. Add shrimp and chicken, stir for a minute then add carrots and beans. Stir.
3. Add the broth, when the broth starts to boil, add the noodles, bell pepper and cabbage. Stir well.
4. When the noodles has absorbed all the liquid, add the soy sauce and pepper. Stir and mix very well to distribute the vegetables evenly.
5. Serve hot with toasted slice bread or French Toast Tuna Sandwich.
