Chicken with Quail Eggs

Here I go again, chicken breast, I'm always worried whenever I saw many chicken breast stocked in the fridge imagining what to do with it, being not an expert cook, it's really difficult for me to decide :( , first I want to stir-fry it but I changed my mind when I saw the quail eggs. 
Ingredients: 350 g chicken breast, deboned and sliced into strips 1 doz. quail eggs, boiled and peeled 1 medium carrot, sliced 10 pieces baby corn, cut into halves 1 medium bell pepper, sliced 1 medium onion, sliced 1 tsp. garlic powder 1 tsp. peppercorns, crushed 3 tbsp. oyster sauce 1 tbsp. tomato paste 1/3 cup chicken broth 1 tsp. sugar 2 tbsp. cooking oil salt and pepper to taste
Marinade: 1/3 cup Italian Dressing 1/2 tsp. salt 1 tbsp. soy sauce 1 tbsp. lime juice 1 tsp. sugar
Directions: 1. Combine marinade and marinate chicken for 1 hour. Drain and reserve marinade. 2. Heat oil in a pan, stir fry the chicken for 5 minutes, then add onions and peppercorns, stir until the onions become translucent. 3. Add in the carrots and baby corns, mix. Pour in the reserve marinade, chicken broth, tomato paste, sugar and garlic powder. Simmer until the liquids are reduced. 4. Add the bell pepper, stir and cook until all the liquids are absorbed. Season with salt and pepper. 5. Turn off the heat. Stir in the oyster sauce and eggs. Serve.

Chicken with Milk

Chicken with milk, our all time favorite meal when I am not feeling well,it means the time that I cannot cook. My husband cooked it for us because this is his favorite recipe to cook. When I can't cook for many reasons, he will asked me, what recipe should he cook and I said "it's up to you" but I know that he will cook chicken with milk again. This is the one he cooked yesterday: 
Ingredients: 500 g chicken, sliced 1 can 160 ml evaporated milk 2 cups chicken broth or water 1 medium tomato, quatered 1 medium onions, sliced 1 ginger thumb-size, sliced 3 cloves garlic, crushed 4 lemon leaves 12 pcs. whole peppercorns 1 long green pepper 2 tbsp. cooking oil 1 carrot, sliced 1/2 tsp. tumeric powder 3 hard-boiled eggs,cut into halves lengthwise salt and pepper to taste
Directions: 1. Sprinkle tumeric powder in the chicken, stir to mix well. 2. Heat oil in a cooking pan. Saute garlic and onons. Add chicken, ginger, tomato, green pepper and peppercorns. Stir. 3. Add broth or water. Simmer for 15 minutes or until cooked 4. Add carrots and lemon leaves. Cook for 5 minutes. 5. Add milk and stir. Add the eggs. Let it boil and cook for 1 minute more. 6. Season with salt and pepper.

Chili Chicken Wings

Wings, my favorite part of the chicken. Be it fried, grilled, stewed or any, it taste so good as well. The picture below is Chili Chicken Wings that I cooked last night but I did not able to take a nice photo out of it. See...but it taste hot! 
Ingredients: 15 pcs. chicken wing 2 tablespoons vegetable oil 2 tbsp. soy sauce 1 tsp. white sugar 3 tbsp. hot tomato ketchup 3 pcs. long pepper, choppped 1 tbsp. hot sauce 1 tsp. ginger powder 1 medium size onion, minced 1/3 cup water salt to taste
Directions: 1. Rinse chicken and pat dry. 2. Heat oil in a wide frying pan over high heat. Fry the wings, a portion at a time (do not crowd pan);cook,turning as needed, until browned on all sides. 3. Return all chicken to pan, then add soy sauce, sugar, onion, ginger, pepper, ketchup, hot sauce and water. Stir well. 4. Turning chicken often, until sauce is thick enough to coat wings. 5. Cook until meat near bone is no longer pink (cut to test), about 20 minutes. 6. Serve hot.

Chicken Tenola

We always cook chicken tenola because my 2 year old son Azhfaar loves chicken soup so much. Adding tumeric powder will add color to the soup. I also like adding lemon leaves to have more aromatic smell and extraordinary taste. 
Ingredients: 500 g. chicken, sliced 5 cups water 1/4 tsp. tumeric powder 4 pcs. lemon leaves 2 tbps. grated ginger 1 onion, sliced 1 ripe tomato, quartered 1 stalk lemon grass, sliced diagonally 1 tbsp. fish sauce 1/2 tsp. sugar 1 cube chicken bouillon (optional) 10 peppercorns 1 medium green papaya, sliced salt and pepper to taste green onions for garnish
Directions: 1. Sprinkle tumeric powder in the sliced chicken, mix well. 2. In a pan, put water, ginger, onions, tomato, chicken cube and lemon grass, let it boil. 3. Add chicken, peppercorns and lemon leaves. When boiled, add fish sauce, sugar, salt and pepper. Simmer until almost done. 3. Add papaya, cook until done. Garnish with green onions.
You can add any vegetables of your choice if you like.

My-style Chicken Fillet

I called this recipe as My-style Chicken Fillet because I really don't know what will I call it, whatever the name implies, then that's it! Lol...! Chicken breast is the least favorite part of chicken in our home, we are all chicken wings fans, hence I usually used the breast in soups, pasta, noodles, etc. Sometimes I'll try to cook it many diffrent ways just to forget it when we eat that it was indeed a chicken breast! 
Ingredients: 1 medium chicken breast, sliced into fillet 3 tbsp. cooking oil 1 medium onion, sliced into rings 3 cloves garlic, minced and fried Marinade: 1/3 cup Italian Dressing 2 tbsp. soy sauce 1 tsp. garlic powder 2 tbsp. lime juice 1 tsp. black pepper 1 tsp. white sugar 1 tsp. salt
Directions: 1. Combine all the marinade ingredients and marinate chicken for 30 miuntes to 1 hour. Drain and reserve marinade. 2. Fry chicken in oil until golden brown. Combine chicken with marinade, then cook until all the liquid will absorb to the chicken. 4. Add in the onions. Stir for 1 minute. 5. Turn off the heat and sprinkle with fried garlic.
