Sweet Potato (Ube) Cream

The photo below has been saved in my folder since few months ago and I was always hesitant to post it here because I really don't know what its appropriate name. In our town in Philippines, we used to call it Ube Cream and I don't know why they called it with that name. Actually, this was made with mashed sweet poatato (kamote in tagalog and ube in maguindanaon dialect), sugar and milk. Other variation includes butter or margarine and chopped peanuts.

My husband bought some sweet potatoes few months ago and Donna asked me if I was familiar with Ube Cream, I said yes of course, so she asked me to teach her how to make it, when I told her how, she immediately boiled the sweet potatoes and made this one.


Ingredients:
Sweet Potatoes, peeled and boiled
Condensed milk
Butter or margarine
Roasted or fried peanuts, chopped

Directions:
1. Mash the boiled potatoes until smooth.
2. Add enough amount of condensed milk on it to sweetened, the mixture should be a little bit creamy.
3. Cover a tray surface with a cling film, then spread the mixture on it about half inch thick. Smoothen the surface evenly.
4. Spread enough amount of margarine or butter over the flattened mixture then sprinkle some chopped peanuts on top.
5. Put in a freezer for 1-2 hours. Slice before serving.

Chocolate Muffins?

As what I said in my post few weeks ago when I made a Raisin Muffin with Chocolate Chipsthat I will make a chocolate muffins someday, so here I am experimenting again since I did not made any chocolate muffins ever since I was born, LOL :). The result turned out good, it still looks like muffin, taste like muffin, it has a chocolaty taste but it was not the perfect muffin that I wanted to make. lol :) Anyway, I will never give up, I will make again some other day. Here's the recipe that I made:

Ingredients:
2 cups all-purpose flour
4 tsp. baking powder
1/3 cup cocoa powder
1 cup chocolate flavored milk
2/3 cup chocolate chips
1 tsp. salt
1/4 cup margarine
1 1/2 cups white sugar
2 eggyolks, beaten
1 tsp. vanilla extract

Directions:
1. Preheat oven to 190 degrees C. Grease muffins tins, or line cups with paper liners.
2. In a small bowl, whisk together flour, baking powder, cocoa powder and salt.
3. In a large bowl, cream butter and sugar. Add beaten eggyolks and vanilla. Stir in chocolate flavored milk.
4. Mix the dry and wet ingredients together. Fold in chocolate chips. Do not over mix. Fill muffin cups 2/3 full with batter.
5. Bake for 25 minutes.

Banana Frittata

This is just another version of the Maguindanaon's native delicacy called Dinangay, which was made of mashed very ripe bananas mixed with flour and sugar, spread thinly over banana leaf, then covered with another leaf on top and grilled over low-medium heat. It was very yummy, I miss it already. I saw very ripe banana in our kitchen the other day and I remembred Dinangay, however my sense of cooking adventure invaded my original plan from making Dinangay to what I called Banana Frittata or whatever it is. The difference was I sliced the bananas instead of mashing it and I also added banana flavored milk and eggyolks.


Ingredients:
2 large very ripe bananas, sliced very thinly
1/2 cup all-purpose flour
2 tbsp. sugar
1/4 cup banana flavored milk
2 eggyolks, beaten
1 pinch salt
Butter cooking spray

Directions:
1. Combine flour, salt and sugar. Pour in the milk gradually over the mixture, stir constantly until a smooth batter is formed.
2. Add beaten eggyolks. Stir in sliced bananas.
3. Grease the non-stick pan with the butter spray and set the heat over low-medium. Pour half of the mixture and spread evenly over the pan. Cook until the buttom turned golden brown.
4. Turn over the fritata to brown the othe side.
5. Repeat the procedure for the remaining half of the mixture. Serve hot.

Brownies

I'm always a big fan of brownies especially the one from Goldilocks in Philippines, I really miss it already. I hope there will be Goldilocks here in Kuwait someday. I tasted the brownies from Breadtalk here in Kuwait and I like it also, very moist. Here's the brownies that I baked the other day. I know it's not the perfect-Goldilocks-type brownies but at least you can still identify that it was a brownies when you eat it. LOL!



Ingredients:
1/2cup flour
1/3 cup cocoa powder
1/2 tsp. baking powder
1/2 cup butter
3 tnsp. sugar
2 eggyolks
1 cup sweetened condensed milk
1/4 cup chopped nuts

Directions:
1. Sift together flour, cocoa and baking powder.
2. Beat butter and sugar until creamy, then add eggyolks while beating.
3. Add to it the flour mixture alternating with the condensed milk.
4. Pour into greased baking tray.
5. Sprinkle chopped nuts on top.
6. Bake in a preheated 180 C degrees oven for 30 minutes.
