Sweet Potato (Ube) Cream

The photo below has been saved in my folder since few months ago and I was always hesitant to post it here because I really don't know what its appropriate name. In our town in Philippines, we used to call it Ube Cream and I don't know why they called it with that name. Actually, this was made with mashed sweet poatato (kamote in tagalog and ube in maguindanaon dialect), sugar and milk. Other variation includes butter or margarine and chopped peanuts.

My husband bought some sweet potatoes few months ago and Donna asked me if I was familiar with Ube Cream, I said yes of course, so she asked me to teach her how to make it, when I told her how, she immediately boiled the sweet potatoes and made this one.


Ingredients:
Sweet Potatoes, peeled and boiled
Condensed milk
Butter or margarine
Roasted or fried peanuts, chopped

Directions:
1. Mash the boiled potatoes until smooth.
2. Add enough amount of condensed milk on it to sweetened, the mixture should be a little bit creamy.
3. Cover a tray surface with a cling film, then spread the mixture on it about half inch thick. Smoothen the surface evenly.
4. Spread enough amount of margarine or butter over the flattened mixture then sprinkle some chopped peanuts on top.
5. Put in a freezer for 1-2 hours. Slice before serving.

Chili Toasted Bread with Scrambled Eggs

Actually, this dish is very common and it is one of our favorite breakfast at home. What made me decide to post it here was because of the toasted bread, it just not an ordinary buttered toast like we used to do at home but a combination of butter, olive oil, red chili, garlic and dried basil leaves. I combined the same amount of melted butter and virgin olive oil, then add few amount of the following ingredients on it: garlic powder, crushed dried basil leaves and chopped red chili, I mixed it together and spreaded it on the surface of each sliced bread, I put it in a preheated 250 degrees C oven for 10 minutes. The result was very yummy! Serve it with scrambled eggs and have a nice breakfast, lol!

Grilled Chicken at the Seaside

It was our office day-off for 2 days, it was National Day and Liberation Day in Kuwait, so we went to the seaside for the 1st day to take our lunch there, the climate now in Kuwait is perfect for outdoor grillings. We grilled some chicken and seafoods there. The image at the left is some of our grilled chicken that day, we just marinated it in a native Moro dish way, with turmeric powder, lemon juice, soy sauce, black pepper, crushed ginger, pounded onions and more more chopped red peppers.Hmmm...yummy!

Hubby's Chicken and Potato Soup with Coconut Milk

It was my hubby's schedule to cook again for dinner, he didn't cook his favorite Chicken with Milk recipe that night, what he prepared was a chicken and potato soup with coconut milk. Here is it:


Ingredients:
500 g chicken, sliced into serving portions
2 mdium potatoes, sliced into cubes (about 1x1 inch)
1 medium onion, sliced thinly
1 thumb-sized ginger, crushed
1 medium ripe tomato, sliced thinly
4-5 cups chicken broth or water
2/3 cup thick coconut milk
long green peppers
salt and pepper to taste
1/2 tsp. sugar
1/4 tsp. turmeric powder (optional but recommended)

Directions:
1. Combine turmeric powder and chicken slices, mix well.
2. In a medium pot, combine chicken broth or water, onion, tomato and ginger, let it boil.
3. Add chicken slices and potato cubes, let it boil. Add salt, peppers and sugar. Simmer until the chicken and potatoes are tender, about 20 minutes.
4. Add coconut milk, cook for 2-3 minutes. Serve.
