Pasta with Carbonara Sauce: Donated by Toni Sabol

4 Eggs
1/4 Cup Butter
1/4 Cup Cream
1 lb. Fettucini or Spaghetti
6 oz. sliced Pepperoni, cut in strips
1 Cup Parmesan Cheese, grated
1/4 Cup Parsley Flakes
Pepper, to taste

Eggs, butter, cream must be room temperature. Beat together eggs and cream until blended. Cook pasta 10-12 minutes, in boiling salted water. Drain well. Turn pasta into a pre-heated 250 degree oven-proof serving dish. Toss pasta with butter and pepperoni. Pour egg mixture over and toss. Add cheese and parsley; toss to mix. Makes 4-5 servings.



Pasta Sauce: Donated by Wade Sabol

6 oz. Butter
1 Cup Chopped Onion
2 large Cloves of Garlic, freshly minced
1/2 Cup finely chopped Carrots
1 Tablespoon Oregano
1 Tablespoon Parsley
1 Tablespoon Sugar
1 Teaspoon Black Pepper
3 large cans Crushed Tomatoes
3 cans filled with Water (use above cans)
1 small can Tomato Paste
4 large Bay Leaves
2 lbs. Sweet Italian Sausage - for meat sauce
3 lbs. Ground Beef - for meat sauce

PLAIN SAUCE

In large pot, melt butter, and add carrots. Simmer 5 minutes. Add onions; simmer until transparent. Add spices; simmer for 5 more minutes. Add tomato products and water. Bring to a rapid boil. Boil for 3 minutes; turn down to a simmer. Let simmer 3-4 hours. Salt/pepper to taste.

MEAT SAUCE

Same as above, but first oven bake sausage until brown. Take drippings to replace the butter. Fry ground beef until fully cooked. Drain and discard the fat. Cut up sausage; add all meat to sauce 3 hours after it started cooking, and allow to cook for an additional hour. If sauce gets too thick, add small quantities of water.



Pizza: Donated by Elaine & Bill Cole

1 package of Pizza Dough
8 oz. Ricotta Cheese, blended well with one egg.
Ham, chopped up
Broccoli, chopped up
Onions, chopped up
Garlic, chopped up
1 Teaspoon Basil
1 Teaspoon Oregano
Salt and Pepper, to taste
8 oz. Mozzarella Cheese

Make dough according to instructions; roll out. Layer as follows: Evenly spread the ricotta mixture onto dough; then the brocolli, ham, onions and garlic; sprinkle with the above seasonings. Sprinkle the mozzarella cheese on top, then bake in 350 degree oven for 35 minutes.



Poor Man's Spaghetti: Donated by Toni Sabol

1 lb. Spaghetti
1 lb. Bacon or Ham
2 Eggs, slightly beaten
2 Tablespoons Cream or Milk
1/2 Teaspoon Salt
1/8 Teaspoon Pepper
2 Tablespoons Chives
1/2 Cup Parmesan Cheese, grated
16 oz. can sliced Mushrooms

Brown the bacon or ham; dice. Cook spaghetti according to directions; drain well and return to pot. Immediately add all remaining ingredients (heat from the spaghetti will cook the eggs). Add cheese; toss lightly. Serves 4-6.
