~ One of my dear Aunt Mick's favorite cookies ~ 1 stick margarine or butter 2 cups firmly packed light brown sugar 2 eggs, beaten 1 & 1/2 cups plain flour 2 teaspoons baking powder 1 teaspoon vanilla extract 1 cup chopped pecans ~ Melt butter and add brown sugar and stir well. Add eggs and mix. Add flour, baking powder, vanilla and nuts and mix well. ~ Spread into a greased and floured 9 x 13" baking pan ~ Bake 20-25 minutes in 350 degree oven. (Don't over bake as they will turn out hard). Cool and cut into squares. May sprinkle with powdered sugar if desired. ~ Makes about 2 dozen * Return to Cookie Menu * White Trash ~ I don't dare reveal my source for this one!! ~ 1 (12 oz.) pkg. chocolate morsels 1 stick margarine or butter 1 (12 oz.) jar creamy peanut butter 1 box honey graham cereal 1 large box white raisins 1 large can mixed nuts 1 box powdered sugar ~ Melt chocolate morsels and butter together on low heat; remove from range and add peanut butter. Pour chocolate and butters mixture over cereal. Add raisins and nuts. Mix well with hands. Put in small trash bag with 1 box powdered sugar. SHAKE! SHAKE! SHAKE! * Return to Cookie Menu * Southern PecanPie Cookie Bars ~ Mmm-m-m Good!! ~ 2 cups all-purpose flour 1/2 cup granulated sugar 1/8 teaspoon salt 3/4 cup butter, cut up 1 cup firmly packed brown sugar 1 cup light corn syrup 1/2 cup butter 4 large eggs, lightly beaten 2 & 1/2 cups pecans, finely chopped 1 teaspoon vanilla extract ~ Combine flour, granulated sugar and salt. Cut in 3/4 cup butter thoroughly until mixture resembles very fine crumbs. ~ Press crumb mixture evenly into greased 13 x 9" pan, using a piece of plastic wrap to press mixture firmly in pan. ~ Bake in 350 degree oven for 17-20 minutes or until lightly browned. ~ Combine brown sugar, corn syrup and 1/2 cup butter in saucepan and bring to a boil over medium heat, stirring gently. Remove from heat. ~ Stir 1/4 of sugar/butter mixture into beaten eggs and add this to remaining hot mixture. Stir in pecans and vanilla. ~ Pour filling over crust. ~ Bake in 350 degree oven 34-35 minutes or until set. ~ Cool completely in pan on a wire rack. ~ Cut into bars. ~ Makes 16 large bars * Return to Cookie Menu * |
