An informational site about Bria Tharen (from the Han Solo trilogy). Includes book summaries, fan fic, artwork, a club, and more (all about Bria, of course). 
A very well-designed site about Captain Solo and Mistress Leia. Includes fan fic, images, sounds, articles...if anything about the characters and/or actors exists, it'll be on this page! VERY complete. 
A comprehensive site about all the droids in the Star Wars Universe. 
A bit o' everything... news, images, sounds, humour, message boards... and lots of updates!  This site is still under construction, but looks to be promising. It has the usual features of a "general" SW site, but in a different format, and is much more interesting.
A well-designed Star Wars site, with lots of interesting stuff to see and do, including a VERY creative weekly poll.
