Sour Cream & Onion Bread
3 cups whole wheat flour
2 Tbsp. white sugar

2 Tbsp. wheat germ, optional
2 tsp. active dry yeast
1 oz. package dry onion soup mix
1 cup sour cream
1/2 cup water
Place flour, sugar, salt, wheat germ, yeast, dried soup, sour cream, and water in the pan of the bread machine in the order recommended by the manufacturer. Select the dough cycle, and press start. Shape dough, and place in a greased loaf pan. Place in a warm spot, and allow to rise until doubled in size. Bake in a preheated 350ºF. oven for 30 minutes. Cool.

Sourdough Beer Bread
from “Bread Machine Baking”
1 tsp. yeast
2 cup all purpose flour
2 tsp. sugar
1 tbsp. lecithin granules
1 tsp. salt
3/4 cup rye sourdough starter*
1/4 cup flat beer
2 tbsp. water
Place in pan in the order given. Bake on basic bread cycle. This can probably be timed. With only 2 cups of flour, this makes a small (14 oz) loaf with a crunchy crust and a light interior. Not a dense bread. It's a rustic looking loaf that ought to be just the thing with stews or hearty soups.
Rye Sourdough Starter: Combine s2 cups rye flour, 2 cups warm water, 1 pkg. yeast in a glass container. Leave at room temperature for about 3 days stirring when you think of it. When it starts to smell like a brewery, you can refrigerate it. Just bring it back to room temperature before you use it.

Sourdough Buttermilk Cheese Bread
1 pkg. active dry yeast
1 cup chopped green chiles
3 cups bread flour
1 tsp. salt
1 tbsp. sugar
1/2 cup sourdough starter
1 cup sharp cheddar cheese, cubed
1/2 cup buttermilk
1/2 cup blue cheese
1/4 cup warm water
1 tsp. cayenne pepper
All ingredients should be at or above room temp before starting. Add in order listed. Select White Bread and press Start. Check for the proper amount of liquid after about 1 minute. Add liquid or flour as required at that time.

Sticky Cinnamon Rolls
1-1/4 cups confectioners' sugar
1/2 cup whipping cream
1 cup coarsely chopped pecans
2 (1 pound) loaves frozen white bread dough, thawed
3 Tbsp. butter or margarine, melted
1/2 cup packed brown sugar
1 tsp. ground cinnamon
3/4 cup raisins, optional
In a small bowl, combine confectioners sugar and cream. Divide evenly between two greased 9-in. square baking pans. Sprinkle with pecans; set aide. On a floured surface, roll each loaf of bread dough into a 12x8” rectangle; brush with butter. Combine brown sugar and cinnamon; sprinkle over butter. Top with raisins if desired. Roll up from a long side; pinch seam to seal. Cut each roll into 12 slices; place with cut side down in prepared pans. Cover and refrigerate overnight. Remove from the refrigerator; cover and let rise until doubled, about 2 hours. Cover loosely with foil. Bake at 375 º for 10 minutes. Uncover and bake 8-10 minutes longer or until golden brown. Makes 2 dozen.

Strawberry Bread
10 oz. package frozen sweetened strawberries, thawed
1/2 cup vegetable oil
2 eggs
1 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. ground cinnamon
1 cup white sugar
1-1/2 cups all-purpose flour
1/2 cup chopped pecans
Drain the strawberries, reserving 1/4 cup of the juice. In a large mixing bowl stir together the oil, eggs, baking soda, baking powder, cinnamon, sugar and flour. Fold in the pecans, strawberries and 1/4 cup of their juice. Pour the mixture into your bread machine pan and place it in the machine. Select the Quick Bread cycle and press Start. Remove pan from bread maker and let cool completely before removing bread from pan.

Summer Thyme Bread
1/4 cup egg substitute
3/4 cup water

1-1/2 tsp. olive oil
1 tsp. lime juice

1/2 cup instant mashed potato flakes
1-1/2 tsp. minced fresh thyme
1 Tbsp. white sugar
1 tsp. active dry yeast
Place ingredients in the pan of the bread machine in the order recommended by the manufacturer. Select Dough cycle; press Start. At end of cycle, remove dough onto a floured board, shape into a ball, cover and let rest for 15 minutes. Shape into a loaf, place in a lightly greased 9x5" loaf pan, and let rise, covered, for 45 minutes. Meanwhile, preheat oven to 375ºF. Slash top of loaf with a sharp knife or razor blade. Sprinkle a bit of flour on top. Bake in preheated 375 degree oven for 30 minutes, or until loaf is golden brown and sound hollow when tapped. Remove loaf onto a wire rack and let cool.

Sunflower Wheat Rolls

1 cup water (70-80ºF.)
1/4 cup canola oil
1/4 cup honey
1 egg
1 tsp. salt
2-1/2 cups bread flour
1 cup whole wheat flour
1/4 cup toasted wheat germ
1/4 cup wheat bran
1/4 cup sunflower kernels
1 Tbsp. poppy seeds
2-1/2 tsp. active dry yeast
In bread machine pan, place all ingredients in the order suggested by manufacturer. Select dough setting (check dough after 5 minutes of mixing; add 1 to 2 Tbsp. of water or flour if needed). When the cycle is completed, turn dough onto a lightly floured surface. Punch down; cover and let stand for 10 minutes. Divide dough into 20 pieces; shape each into a ball. Place 2 inches apart on baking sheets coated with nonstick cooking spray. Cover and let rise in a warm place until doubled, about 45 minutes. Bake at 375ºF. for 12 minutes or until golden brown. Remove from pans to cool on wire racks. Makes 20 rolls.

Swedish Tea Ring
1 cup milk
1 egg, beaten
1 Tbsp. butter
3 Tbsp. white sugar
1/2 tsp. salt
3-1/4 cups bread flour
3/4 tsp. active dry yeast
2 Tbsp. butter, softened
2 tsp. ground cinnamon
3/4 cup packed brown sugar
1/2 cup raisins
1 cup confectioners' sugar
1/2 tsp. almond extract
1 Tbsp. milk
In a bread machine, put milk, egg, butter, sugar, salt, bread flour, and yeast in the order suggested by the manufacturer. Select the Dough cycle. Start. Butter 2 cookie sheets; set aside. Divide dough in half. Roll each piece out into rectangles, about 12x16". Spread each dough rectangle with 1 Tbsp. softened butter. In a small bowl, combine 2 tsp. ground cinnamon, 3/4 cup light brown sugar, and 1/2 cup raisins. Sprinkle mixture onto rectangles. Roll them up jelly-roll fashion, along long side. Pinch edges to seal. Stretch and twist into rings. Place them onto prepared cookie sheets with sealed edges down. Pinch ends together to form a ring. Using clean scissors, cut 2/3 way of the way through the loaf at about 1" intervals. Spread each cut slightly. Cover with a clean towel and let loaves rise until double. At this time, you may cover tightly with plastic wrap and refrigerate until later. Preheat oven to 350ºF. Bake for 20 minutes. The loaf will be light brown on top and the filling will be oozing and bubbling through. Repeat for second ring. In a small mixing bowl, combine confectioners sugar, almond extract, and milk. Drizzle icing over warm bread.

Sweet Dinner Rolls
1/2 cup warm water (110ºF.)
1/2 cup warm milk
1 egg
1/3 cup butter, softened
1/3 cup white sugar
1 tsp. salt
3-3/4 cups all-purpose flour
1/4-oz. pkg. active dry yeast
1/4 cup butter, softened
Place water, milk, egg, 1/3 cup butter, sugar, salt, flour and yeast in the pan of the bread machine in the order recommended by the manufacturer. Select dough/knead cycle; press start. When cycle finishes, turn dough out onto a lightly floured surface. Divide dough in half. Roll each half into a 12" circle, spread 1/4 cup softened butter over entire round. Cut each circle into 8 wedges. Roll wedges starting at wide end; roll gently but tightly. Place point side down on ungreased cookie sheet. Cover with clean kitchen towel and put in a warm place, let rise 1 hour. Meanwhile, preheat oven to 400ºF. Bake in preheated oven for 10 to 15 minutes, until golden. Makes 16.

Syrian Bread
1-1/8 cups water
2 Tbsp. vegetable oil
1/2 tsp. white sugar
1-1/2 tsp. salt
3 cups all-purpose flour
1-1/2 tsp. active dry yeast
Place ingredients in the pan of the bread machine in the order recommended by the manufacturer. Select Dough cycle; press Start. Preheat oven to 475ºF. Once the dough has risen, turn it out onto a lightly floured surface. Divide the dough into eight equal pieces and form into rounds. Cover the rounds with a damp cloth and let rest. Roll dough into eight thin flat circles, about 8 inches in diameter. Cook two at a time on preheated baking sheets or a baking stone until puffed up and golden brown, about 5 minutes. Repeat for remaining loaves.

1/2 cup sherry

1 Tbsp. vegetable oil
1 Tbsp. dried basil

Wheat Dinner Rolls
recipe by West Bend
7-1/2 ounces water
1-1/2 cups bread flour
1-1/2 cups whole wheat flour
2 Tbsp. dry milk
3-1/2 Tbsp. brown sugar, packed
1 tsp. salt
3 Tbsp. butter, cut into 6 pieces
2 tsp. active dry yeast, 1 1/2 tsp. rapid rise
Place all ingredients in the inner pot of bread machine in order listed. Use Basic Dough Setting; press Start. When setting is complete, remove dough from inner pot and place on lightly floured surface. Divide dough into 17 equal pieces (1/5oz.). Shape into balls. Place on baking sheet, let stand covered about 30 minutes, or until doubled in size. Bake in preheated 350ºF. oven for 20 to 30 minutes, or until golden brown.
VARIATIONS:
Bow Knots: Prepare dough as directed above, except for shaping into balls. On floured surface, roll dough into 12 ropes approximately 10 inches long. Tie each rope into a knot. Place on greased baking sheet. Let rise and bake as directed.
Clover Leaf Rolls: Prepare dough as directed above, except for shaping into balls. On floured surface, shape dough into 36 balls. Place 3 balls in each cup of greased muffin pan. Let rise and bake as directed. Brush with melted butter. Bake as directed.
Parker House Rolls: Prepare dough as directed, except for dividing dough. On floured surface, roll dough 12" round; cut out 12 rolls with 2" round cutter. Place on greased baking sheet. Spread each roll with 1/4 tsp. butter or margarine. Fold in half; press lightly. Let rise and bake as directed.
