Cinnamon Rolls
1 cup warm water (110ºF.)
1 egg
3 cups bread flour
1/4 cup white sugar
3 Tbsp. instant powdered milk
1-1/2 tsp. salt
5 Tbsp. butter, softened
1 tsp. instant yeast
1/3 cup butter
1/2 cup vanilla ice cream
1/2 cup brown sugar
1/2 cup butter, softened (for spreading)
1 Tbsp. ground cinnamon
1/2 cup brown sugar
Place water, egg, bread flour, white sugar, powdered milk, salt, 5 Tbsp. butter and yeast in bread machine in the order suggested by the manufacturer. Select Dough setting, and turn machine on. Meanwhile; in a small saucepan, melt 1/3 cup butter. Add 1/2 cup brown sugar and ice cream; bring to a boil, and cook for 2 minutes. Pour caramel into the bottom of a lightly greased 9 x 13" pan. Preheat oven to 350ºF. When machine has finished cycling remove dough from pan and turn it out onto a lightly floured surface. Pat dough into a rectangle. Spread with softened butter and sprinkle lightly with cinnamon. Crumble 1/2 cup brown sugar over the top. Roll up, and seal edge. Cut into 12 rolls, and place in prepared pan of caramel. Allow to rise until doubled in size, about 45 minutes. Bake at 350ºF. for approximately 20 to 25 minutes, until golden brown. Makes 1 dozen.

Cranberry Pineapple Bread

Add all the ingredients to the pan of the bread machine in the order suggested by the manufacturer. Set your bread machine to Basic Loaf, and check to see that the dough forms a ball without excess moisture. May have to add a little more bread flour, no more than a Tbsp., so that the dough forms a nice solid ball.

Diana's Hawaiian Bread Rolls

Place ingredients in the pan of the bread machine in the order recommended by the manufacturer. Select dough cycle for a 2 pound batch; press Start. The dough can be a bit sticky, so you may want to add a little bit more bread flour as it mixes. When the dough cycle is complete, turn the risen dough out on a lightly floured surface and divide into twelve equal pieces. Form the pieces into rounds and place on lightly greased baking sheets. Cover the rolls with a damp cloth and let rise until doubled in volume, about 40 minutes. Meanwhile, preheat oven to 350ºF. Bake in preheated oven for 15 minutes, until golden brown.

Garlic Parmesan Rolls

3 cups flour
1-1/2 tsp. salt
1-1/2 Tbsp. butter
2 Tbsp. dry milk powder

1/4 cup butter, melted
1 clove garlic, minced
2 Tbsp. parmesan cheese
Place water, flour, salt, butter, dry milk and yeast in bread pan in order listed. Select Dough setting and press start. When dough has risen long enough, the machine will beep. Turn off bread machine, remove bread pan, and turn out dough onto a floured surface or cutting board. Gently roll and stretch the dough into a 24" rope. Grease two 8" pie pans. With a sharp knife, divide dough into 24 pieces. Shape into balls; place in prepared pie pans. In a small bowl, combine butter and garlic; pour over rolls (or brush). Sprinkle with Parmesan cheese. Cover and let rise in a warm oven for 30-45 minutes until doubled. To warm oven slightly, turn oven on warm setting for 2 minutes, then turn off and place covered dough in oven to rise. Remove pan from oven to preheat. Preheat oven to 375ºF. Bake rolls for 15 minutes until golden brown. Remove, cut apart and serve warm.

Glazed Donuts

1/2 cup evaporated milk
1/2 cup water
2 Tbsp. butter
1 egg
1/3 cup sugar
3 cups all-purpose flour
1 tsp. salt
2 tsp. active dry yeast
oil for deep-frying
Add ingredients to the bread machine according to manufacturer's suggested order. At the end of the kneading cycle, cover the pan with plastic wrap and transfer to the refrigerator. (Or, transfer the mixture to a lightly greased bowl.) Refrigerate overnight. Remove dough to a lightly floured surface; roll to about 1/2" thick. Cut out into donut shapes or form strips into knots or donut shapes. Cover and let rise for about 1 hour. Fry at 360º until light and browned. Glaze as desired.
Chocolate Glaze
2 Tbsp. butter
2 Tbsp. cocoa
3 Tbsp. hot water
1-1/2 cups powdered sugar
1/2 tsp. vanilla extract
Melt butter in small saucepan over low heat; add cocoa and water. Stir constantly until mixture is thick. Remove from heat; gradually add powdered sugar and vanilla; beat with a whisk until smooth. Add additional hot water, 1/2 tsp. at a time, until drizzling consistency.
For vanilla glaze: Omit cocoa and add 1-1/2 tsp. vanilla.

Golden Egg Bread

4 tbsp sugar

Combine all ingredients in the pan (according to your machine), select white bread and start. This makes a great sandwich bread (like WONDER bread!). It rises tall (very) and cuts beautifully! You can make this in either a 1-1/2 lb or 2 lb loaf machine and it'll turn out great in either.
LYNDA'S NOTE: I prefer to use the "Dough" setting cycle, then shape and bake in the oven. After shaping allow to rise again (double in size, about 30-45 minutes), then bake in a 350-375ºF.oven for 35-45 minutes. Baking time will vary from oven to oven. Baking this way will give the bread a more "store bought" look and it'll slice much more evenly (easily) for sandwiches.

Hamburger or Hot Dog Buns

1 cup water

2 cups all purpose flour
1 cup bread flour
3/4 tsp. salt
1/4 cup shortening
1/4 cup sugar

Put all of the ingredients in the bread machine pan (wet to dry with yeast last). Choose the dough cycle. When done, remove the dough and roll gently into a 12” cylinder. Divide into 12 (for hot dogs), or 8 (for hamburgers) sections. Shape into 6” tubes (hot dogs), or balls(for burgers). If making for burgers, slightly flatten the tops. Place on greased baking sheet. Cover and let rise for 10 minutes. Then bake at 400ºF. for 12-15 minutes.

Place warm water, sugar, 1 tsp. salt, flour and yeast in the pan of the bread machine in the order recommended by the manufacturer. Select dough cycle; press Start. Most machines have a 'beep' toward the end of their cycle that allows you to add additional ingredients. Sprinkle in oregano and basil at this time. When machine's Dough cycle has ended, turn the dough out onto a lightly floured surface and shape into an oval or round loaf. Place loaf on a baking sheet that has been well greased with olive oil. Cover with a damp towel and let rise in warm place until doubled, about 1 hour. Meanwhile, preheat oven to 400ºF. In a small bowl, mix 2 Tbsp. water with 1/4 tsp. salt. Cut three slits on top of bread. Brush entire loaf with salt water mixture and sprinkle with toasted sesame seeds. Bake in preheated oven for 20 to 25 minutes, until golden and bottom of loaf sounds hollow when tapped. This bread will be hard when it comes out of the oven. Let sit 10 minutes to soften before cutting.

1-1/4 cups whole wheat flour
1/4 cup rolled oats
1/8 cup wheat germ
2 Tbsp. honey
7/8 cup milk

1/4 (.25 ounce) package active dry yeast

Honey Sourdough
2/3 cup liquid sourdough starter
1/2 cup water
1 Tbsp. vegetable oil
2 Tbsp. honey
1/2 tsp. salt
1/2 cup high protein wheat flour
2 cups bread flour
1 tsp. active dry yeast
Place ingredients in the pan of the bread machine in the order recommended by the manufacturer. Select basic white cycle; press Start. Add water or flour 1 Tbsp. at a time, if needed, to obtain a smooth dough ball.

Hunza Bread
1/4-oz. package active dry yeast
2 cups bread flour
1 cup whole wheat flour
1/4 cup wheat germ
1/4 cup packed brown sugar
1 tsp. salt
2 Tbsp. butter
3/4 cup golden raisins
1/4 tsp. ground ginger
1/2 tsp. ground cinnamon
1-1/2 cups warm water (110ºF.)
Place ingredients in the pan of the bread machine in the order suggested by the manufacturer. Select the Dough/Manual setting and Start. After the first rise, remove the bread from the bread machine. Shape into two loaves, and place into lightly greased 7x3" loaf pans. Allow the dough to rise until doubled in volume, but not more than 1" above the top of the pan. Bake at 350ºF. for 35 to 40 minutes.

Irish Raisin Bread
from Lynda
1 pkg. yeast
3 cups bread flour (may need up to 1/4 cup more if bread is too wet)
1/4 cup sugar
3-4 tsp cinnamon
1/4 tsp salt
1/4 cup butter
1 egg
3/4 cup water
1/2 cup milk (I often use buttermilk)
1 cup raisins (I like craisins)
Add all ingredients in the order your machine instructs, except raisins to pan. Select raisin cycle. Add raisins when machine beeps. (if your machine doesn't have one use white bread cycle and add raisins on the 2nd kneading - 5 minutes before done). You will want to use a light crust setting also if your machine has it. This rises very tall and is a very rich, moist bread that makes wonderful French toast if you have any left over!
NOTE: You may also use 3 - 4 Tbsp. powdered buttermilk and all water - for a total of 1 1/4 cups if you wish.

Italian Bread
4 cups unbleached all-purpose flour
1 Tbsp. light brown sugar
1-1/3 cups warm water (110ºF.)
1-1/2 tsp. salt
1-1/2 tsp. olive oil
1/4-oz. package active dry yeast
1 egg
1 Tbsp. water
2 Tbsp. cornmeal
Place flour, brown sugar, warm water, salt, olive oil and yeast in the pan of the bread machine in the order recommended by the manufacturer. Select dough cycle; press Start. Deflate the dough and turn it out onto a lightly floured surface. Form dough into two loaves. Place the loaves seam side down on a cutting board generously sprinkled with cornmeal. Cover the loaves with a damp cloth and let rise, until doubled in volume about 40 minutes. Meanwhile, preheat oven to 375ºF. In a small bowl, beat together egg and 1 Tbsp. water. Brush the risen loaves with egg mixture. Make a single long, quick cut down the center of the loaves with a sharp knife. Gently shake the cutting board to make sure that the loaves are not sticking. If they stick, use a spatula or pastry knife to loosen. Slide the loaves onto a baking sheet with one quick but careful motion. Bake in preheated oven for 30 to 35 minutes, or until loaves sound hollow when tapped on the bottom.

2 tsp. Italian seasoning
1 tsp. ground black pepper
2 Tbsp. grated Parmesan cheese

2 tsp. active dry yeast
Place ingredients in the pan of the bread machine in the order suggested by the manufacturer. Select White Bread or Basic cycle. Start.
