ABM Monkey Bread
2-1/2 tsp. active dry yeast or bread machine yeast
3 cups all-purpose flour
1 tsp. ground cinnamon
1 tsp. salt
1/4 cup white sugar
2 Tbsp. butter or margarine, softened
1 cup water
1 cup butter or margarine
1 cup brown sugar
1 cup raisins or currants

Remove baking pan from machine. Place yeast, flour, ground cinnamon, salt, white sugar, 2 Tbsp. butter and water in the order that is recommended for the bread maker. Make sure that no liquid comes in contact with the yeast. Select dough cycle and press start. When dough is complete, place dough on floured surface and knead 10 to 12 times. In a medium saucepan on low heat, melt one cup of butter, stir in brown sugar and raisins ( 1/4 cup of chopped nuts is good too!). Stir until smooth. Remove from heat. Cut dough in one " chunks. Drop one chunk at a time into the butter sugar mixture. Thoroughly coat dough pieces, then layer them loosely in a greased Bundt or tube pan, staggering layers so you're plopping each dough chunk over a space between two below. Let rise in a warm, draft-free spot until dough is just over the top of the pan, 15 to 20 minutes. Bake in a preheated 375ºF. oven for 20 to 25 minutes or till golden brown. Remove from oven, place a plate face down in top of the pan and, using oven mitts to hold plate on pan, turn over both until bread slides out onto plate. Serve warm.

Almond Brunch Loaf

1/2 cup orange juice
1 egg
2 Tbsp. margarine or butter
1/2 tsp. salt
2-1/4 cups bread flour
1 Tbsp. white sugar
1-1/2 tsp. active dry yeast
3/4 cup almond cake and pastry filling (not almond paste)
3 Tbsp. chopped toasted almonds
1 tsp. grated orange peel
orange juice
granulated sugar

Add orange juice, egg, margarine or butter, salt, bread flour, sugar, and yeast to the bread machine pan according to manufacturer's directions. Select dough cycle. When dough cycle is complete, remove dough from machine. Cover and let rest for 10 minutes. On a lightly floured surface, roll dough into a 24x8" rectangle. In a small mixing bowl stir together almond filling, almonds, and orange peel. Spread filling over dough to within 1/2" of the edges. Fold dough loosely from a short side, making about eight 3-inch-wide folds. (This is similar to rolling a jelly roll, except you fold the dough instead of rolling it.) Transfer to a lightly greased cookie sheet. On one of the long sides, make eleven 2-1/2" cuts from the edge toward the center at about 3/4" intervals. Flip every other strip of dough over to the alternate side. Slightly twist each strip, exposing the filling. Cover and let rise in a warm place until nearly double (about 30 minutes). Bake in a 350ºF. oven for 25 to 30 minutes or until golden brown. If necessary, cover loosely with foil during the last 5 to 10 minutes to prevent overbrowning. Lightly brush the bread surface with orange juice; sprinkle with sugar. Serve warm.
     NOTE: If you have an insulated baking sheet, use it so the loaf bakes through without overbrowning on the bottom.

3/4 cup milk

2 cups bread flour
1-1/2 tsp. yeast

Just like Wonder Bread! Add ingredients according to manufacturer's directions. Use the light crust setting.

2-3/4 cups bread flour
1/4 cup canola oil
1 tsp. active dry yeast
1/4 cup white sugar
1/2 tsp. salt
18 Tbsp. warm water

Place ingredients in the pan of the bread machine in the order recommended by the manufacturer. Select White Bread cycle; press Start. When the dough has raised once and second cycle of kneading begins, turn machine off. Reset by pressing Start once again. This gives the dough two full raising cycles before the final raising cycle prior to baking.

1-1/2 tsp. active dry yeast
1-1/2 tsp. ground cinnamon
3-1/4 cups bread flour
1-1/2 tsp. salt
3 Tbsp. powdered buttermilk
1-1/4 cups apple pie filling
1-1/2 Tbsp. butter, softened
1/2 cup water

Place all ingredients into the pan of the bread machine in the order suggested by the manufacturer. Press Start.

Applesauce Bread
2 cups all-purpose flour
1 tsp. baking powder
1/2 tsp. baking soda
1/2 cup white sugar
3 Tbsp. vegetable oil
2 eggs
2/3 cup applesauce
1-1/2 tsp. ground cinnamon

Place ingredients in the pan of the bread machine in the order recommended by the manufacturer. Select cycle; press Start. Let the dough mix for 3 to 5 minutes, until all ingredients are thoroughly combined. If necessary, use a rubber spatula to push the dough from the sides of the bread pan. After 3 to 5 minutes have passed on the clock display, press Stop. Smooth out the top of the loaf with rubber spatula. Select Bake setting and press Start. To test the bread for doneness, insert a toothpick into the center top. Remove the toothpick. If the bread is done, the toothpick will come out clean. If there is dough on the toothpick, reset the machine to Bake and continue an additional 10 to 15 minutes. Test again with toothpick to assure the bread is completely baked. Remove the pan from the machine but allow the bread to remain in the pan for 10 minutes before removing the bread and placing on a wire rack to cool.

Apricot Almond Loaf
15 ounce can canned apricots
2 tsp. almond extract
1 Tbsp. butter, softened
1 tsp. salt
1/4 cup white sugar
3-1/2 cups bread flour
2-1/2 Tbsp. vital wheat gluten
1/4-oz. package active dry yeast
2/3 cup slivered almonds

Place all ingredients except the almonds in the pan of the bread machine in the order recommended by the manufacturer. Select cycle; press Start. If your machine has a Fruit setting, add the almonds at the signal, or about 5 minutes before the kneading cycle has finished.

Apricot Walnut Loaf
1 egg
3/4 cup water
1 tsp. salt
1-1/2 tsp. vegetable oil
1-1/2 Tbsp. honey
1/2 cup rye flour
2-1/2 cups bread flour
1 tsp. orange zest
1/2 tsp. ground cardamom
2 Tbsp. nonfat dry milk powder
1 tsp. active dry yeast
2 Tbsp. chopped walnuts, toasted
1/2 cup dried apricots, diced
1/4 cup apricot preserves

Place all ingredients except preserves, walnuts, and apricots into bread machine in the proper order for your machine. Use dough cycle. As the bread kneads, adjust the liquid to flour ratio if needed. At the end of the dough cycle, remove dough and place on floured board. Cover and let rest for 10 minutes. Roll out into a rectangle, brush with apricot preserves, and sprinkle walnuts and apricots on top. Roll up into a loaf, place in greased bread pan, cover, and let rise for 45 minutes. At the end of the rising time, slash down the center, brush with a little beaten egg or egg substitute and milk, and bake in a preheated 375ºF. oven for 25-30 minutes. Remove bread from pan, place on rack, and let cool.

1 cup water
1-1/2 Tbsp. white wine vinegar
3 Tbsp. olive oil
1/8 tsp. cayenne pepper
3/4 tsp. oregano
2 cloves garlic, minced
3 Tbsp. chopped onion
3 Tbsp. fresh parsley
1-1/2 tsp. salt
1 Tbsp. white sugar
3 Tbsp. wheat bran
3 cups bread flour
2 tsp. active dry yeast

Place ingredients in the pan of the bread machine in the order recommended by the manufacturer. Select Basic or White Cycle; press Start.

Awesome ABM Dinner Rolls
1 cup water
2 Tbsp. butter, softened
1 egg
3-1/4 cups bread flour
1/4 cup sugar
1 tsp. salt
3 tsp. yeast

Use dough cycle. When finished, pull apart into 15 balls. Place on greased cookie sheet 2" apart and brush with melted butter. Cover and set in slightly warm place to rise for about 30-40 minutes or until nearly doubled in size. Bake at 375ºF. for 12-15 minutes or until golden brown. Remove from oven and brush with butter again.

Bacon-Cheese Bread
1 cup milk
1-1/3 Tbsp. butter
1 Tbsp. sugar
1/2 tsp. salt
3 cups flour
1-1/2 tsp. active dry yeast
6 Tbsp. shredded cheddar cheese
6 Tbsp. cooked crumbled bacon

Place all but cheese and bacon in bread pan in order recommended by manufacturer. Set on light or medium cycle. Add cheese and bacon at raisin/nut cycle or 5 to 10 minutes before last kneading cycle ends.

Bagel Bread
1/2 cup milk
1/3 cup water
1 egg
2-1/4 cups bread flour
1 Tbsp. white sugar
1 tsp. salt
1-1/2 tsp. active dry yeast

Place ingredients in the pan of the bread machine in the order recommended by the manufacturer. Select Basic White Bread cycle; press Start. After the baking cycle ends, remove bread from pan, place on metal rack and allow to cool one hour before slicing.

Bagels
1 cup warm water (110ºF./45ºC.)
1-1/2 tsp. salt
2 Tbsp. white sugar
3 cups bread flour
2-1/4 tsp. active dry yeast
3 quarts boiling water
3 Tbsp. white sugar
1 Tbsp. cornmeal
1 egg white
3 Tbsp. poppy seeds

Place water, salt, sugar, flour and yeast in the bread machine pan in the order recommended by the manufacturer. Select Dough setting. When cycle is complete, let dough rest on a lightly floured surface. Meanwhile, in a large pot bring 3 quarts of water to a boil. Stir in 3 Tbsp. of sugar. Cut dough into 9 equal pieces, and roll each piece into a small ball. Flatten balls. Poke a hole in the middle of each with your thumb. Twirl the dough on your finger or thumb to enlarge the hole, and to even out the dough around the hole. Cover bagels with a clean cloth, and let rest for 10 minutes. Sprinkle an ungreased baking sheet with cornmeal. Carefully transfer bagels to boiling water. Boil for 1 minute, turning half way through. Drain briefly on clean towel. Arrange boiled bagels on baking sheet. Glaze tops with egg white, and sprinkle with your choice of toppings. Bake in a preheated 375ºF. (190ºC.) oven for 20 to 25 minutes, until well browned.

Banana Bread
2 cups all-purpose flour
1 tsp. baking powder
1/2 tsp. baking soda
3/4 cup white sugar
3 Tbsp. vegetable oil
2 eggs
2 bananas, peeled and halved lengthwise

Place ingredients in the pan of the bread machine. Select the Dough setting, and press Start. Mix the bread for 3 to 5 minutes until the bananas are mashed and all ingredients are thoroughly combined. If necessary, use a rubber spatula to push the dough from the sides of the bread pan. When 3 to 5 minutes have passed on the clock display, press Stop. Do not continue mixing. Smooth out the top of the loaf with the rubber spatula. Select the Bake setting, and press Start. The Bake cycle time may vary with machines, but should be about 50 minutes. To test the bread for doneness, insert a toothpick into the center top. Remove the toothpick. If the bread is done, the toothpick will come out clean. If there is dough on the toothpick, reset the machine on Bake and continue to bake an additional 10 to 15 minutes. Test again with the toothpick to assure the bread is completely baked. Remove the pan from the machine, but allow the bread to remain in the pan for 10 minutes. Remove the bread to cool completely on a wire rack.

Banana Macadamia Nut Bread
2/3 cup warm water (110ºF.)
3/4 cup mashed bananas
2 Tbsp. margarine, softened
1 egg
3-1/4 cups bread flour
3 Tbsp. white sugar
1-1/4 tsp. salt
2-3/4 tsp. active dry yeast
1/2 cup chopped macadamia nuts

Place ingredient in bread machine in order suggested by your manufacturer. Select sweet bread setting and light crust. Add macadamia nuts when indicated by your manufacturer.

Basic Sourdough Bread
1-1/4 cups sourdough starter
1/3 cup water
3 cups all-purpose flour
1 Tbsp. white sugar
1 Tbsp. vegetable oil
1 tsp. salt
2 tsp. bread machine yeast

Allow starter to come to room temperature. Place all ingredients in the bread machine in the order suggested by the manufacturer. Select Basic or White Bread cycle, and Medium crust setting. Start.

Basic White Bread
1-1/4 cups buttermilk
2 Tbsp. butter
2 Tbsp. sugar
1 tsp. salt
3 cups bread flour
1 package active dry yeast

Measure milk, butter, sugar, salt and flour into baking pan. Sprinkle yeast in center of flour. Insert pan securely into baking unit and close lid. Select basic white bread setting if using if using active dry yeast, or quick baking setting if using fast-rise yeast. Select medium baking degree setting. Press start. Using hot pads, remove pan from unit and pull out kneading rod. Turn out onto cooling rack and cool before slicing.

Basic White Bread #2
1 cup water
1/4 cup butter
1 whole egg
2 Tbsp. sugar
1 tsp. salt
3 cups bread flour
1/4 cup nonfat dry milk
2-1/4 tsp. yeast

Place ingredients in bread machine pan in order according to manufacturer's instructions. Select White or Light setting; press start.

Basil & Sun-Dried Tomato Bread
2-1/4 tsp. active dry yeast
3 cups bread flour
3 Tbsp. wheat bran
1/3 cup quinoa
3 Tbsp. instant powdered milk
1 Tbsp. dried basil
1/3 cup chopped sun-dried tomatoes (NOT the packed-in-oil kind)
1 tsp. salt
1-1/4 cups water
1 cup boiling water to cover

In a small bowl, pour boiling water over sun-dried tomato halves to cover. Soak for 10 minutes, drain, and cool to room temperature. With scissors, snip into 1/4" pieces. Place all ingredients into the pan of the bread machine in the order recommended by the manufacturer. Select the Basic or White Bread cycle, and Start.

Beer Rolls
4 cups bread flour
2 Tbsp. honey
1/4 tsp. salt
1 Tbsp. margarine
10 ounces dark beer
1/4-oz. package active dry yeast
1 pinch ground cinnamon
2 Tbsp. butter, melted

Allow 10 to 12 ounces of beer to reach room temperature and go flat. This will take approximately 3 to 4 hours. Combine flattened beer, butter, cinnamon, salt, and honey in the pan of bread machine. Add flour and yeast being careful that the yeast does not touch the liquid. Select Dough setting, and Start. After the dough has risen, remove the dough from the pan. Form into a long loaf; cut and form rolls. Place on a floured baking sheet, cover, and allow to rise for approximately 45 minutes. Brush top of rolls with melted butter. Bake at 350ºF. for 30 minutes, or until golden brown.

2/3 cup raspberries

2-1/2 Tbsp. raspberry syrup
1/3 tsp. salt
1 cup whole wheat flour
1 cup bread flour
1 tsp. yeast
Medium Loaf:
1 cup raspberries
1-1/2 Tbsp. vegetable oil
3-3/4 Tbsp. raspberry syrup
1/2 tsp. salt
1-1/2 cups whole wheat flour
1-1/2 cups bread flour
1-1/2 tsp. yeast
Large Loaf:
1-1/3 cups raspberries
2 Tbsp. vegetable oil
5 Tbsp. raspberry syrup
2/3 tsp. salt
2 cups whole wheat flour
2 cups bread flour
2 tsp. yeast

Use Raisin bread cycle. At the beep, add 1/4 (1/3) (1/2) cup chopped walnuts or pecans, if desired. If using Panasonic/National machine, add nuts following first kneading; if using Maxim or Mister Loaf, add at the beginning. If using Welbilt ABM 100, DAK, or Mister Loaf, use Sweet bread cycle.
     NOTE: Try the recipe with cranberries in the fall, substituting honey for the berry syrup. If cranberries are fresh, add 1/3 (1/2) (2/3) cup water and syrup of your choice.

1-1/8 cups warm water - add up to 2 tbsp more water if necessary
1-1/2 cups bread flour
1 cup rye flour
1 cup whole wheat flour
1-1/2 tsp kosher salt
1-1/2 tbsp olive or vegetable oil
1/2 cup molasses
3 tbsp cocoa powder
1 tbsp caraway seeds, optional
2-1/4 tsp yeast

Select white bread or wheat bread cycle and a light crust. Proceed as indicted for your machine.

Blueberry Walnut Bread

1/3 cup margarine, softened
1/2 cup milk
2 eggs
2-1/2 cups all-purpose flour
1 cup white sugar
2 1/2 tsp. baking powder
1/2 tsp. baking soda
1 tsp. salt
1 cup frozen blueberries, thawed, drained
1/2 cup chopped walnuts
1/2 tsp. lemon peel, optional

In a large bowl, beat together the margarine, milk, eggs and sugar. Stir in the flour, baking powder, baking soda and salt. Carefully fold in the blueberries and walnuts. Fold in lemon peel if desired. Spray bread machine pan with cooking spray. Pour mixture into bread machine pan and put pan into bread machine. Select Quick Bread/Cake cycle, and press Start. Check in 1 minute to see if mixture is well blended. Cook until cake cycle stops. Cool completely in bread machine pan before removing.

Bread Bowls
3/4 cup + 1 Tbsp. water
1/2 cup milk
1 Tbsp. butter or margarine
3/4 tsp. salt
3 cups bread flour
1 Tbsp. sugar
2 tsp. bread machine yeast

Add ingredients to bread machine pan in the order suggested by manufacturer. Select dough/manual cycle. When cycle is complete, remove dough from machine to lightly floured surface. If necessary, knead in enough flour to make dough easy to handle. Divide dough into 2 equal portions; shape each into smooth ball. Place on greased baking sheet. Cover; let rise in warm, draft-free place until doubled in size, about 1 hour. With sharp knife, make 4 (1/4" deep) slashes in crisscross fashion on top of loaves. Bake at 375ºF. for 20 to 25 minutes or until done. Remove from baking sheet; cool on wire rack. Cut off 1/3 of loaf; hollow out loaf to form 1/4" thick bowl. Fill bowl with soup. Makes two 6" bowls.
     NOTES: Check dough after 5 minutes of mixing; it should form a soft, smooth ball around the blade. If dough is too dry or stiff, add water in 1-tsp. increments until the right consistency is reached. If dough is too soft or slack, add bread flour in 1-tsp. increments to achieve proper consistency. Do not add more than 3 to 4 Tbsp. of liquid or flour.
          I know this sound nuts, but I toss an ice cube into the oven at the same time. Don't ask my why it works, but you get a nice chewy crust with character. Something about the steam early in the cooking process, like it creates a wet thermal conductive layer that enhances browning.

Bread Machine Rolls
3 cups bread flour
3 Tbsp. white sugar
1 tsp. salt
1/4 cup dry milk powder
1 cup warm water (110ºF.)
2 Tbsp. butter, softened
1/4-oz. package active dry yeast
1 egg white (for egg wash)
2 Tbsp. water

Place all of the ingredients (except the egg white and cold water) in the pan of the bread machine in the order recommended by the manufacturer. Set on Dough cycle, press Start. Remove risen dough from the machine, deflate and turn out onto a lightly floured surface. Divide the dough into twelve equal pieces and form into rounds. Place the rounds on lightly greased baking sheets. Cover the rolls with a damp cloth and let rise until doubled in volume, about 40 minutes. Meanwhile, preheat oven to 350ºF. In a small mixing bowl, lightly beat the egg white with the water; lightly brush the risen rolls with this mixture. Bake 15 minutes or until the rolls are golden brown. Makes 1 dozen.

Breakfast Brioche
1/2 cup milk
3 eggs
1/2 tsp. vanilla
1/2 cup (1 stick) butter
1/4 cup sugar
1-1/2 tsp. salt
1 tsp. cinnamon
1/4 tsp. nutmeg
3-1/2 cups bread flour
3/4 cup raisins (use half golden raisins if desired)
1-1/2 tsp. instant yeast

Place all of the ingredients, except the raisins, into the pan of your bread machine, program the machine for Sweet Bread or Raisin Bread (or whole grain, or basic white bread, if your machine has neither of those cycles), and press Start. If you've programmed your machine for the raisin bread cycle, add the raisins at the beep. If your machine is programmed for some other cycle, add the raisins about 5 minutes before the end of the second kneading cycle. Check the dough after 10 to 15 minutes of kneading; it should have formed a smooth ball, a bit soft but not sticky. If necessary, adjust the dough's consistency with additional flour or water.

1 cup water

2 Tbsp. honey
2 cups bread flour
1/2 cup whole wheat flour
1/3 cup dry milk powder
1 tsp. salt
1/4-oz. package active dry yeast

Put ingredients into bread machine in the order suggested by the manufacturer. Process for large (1-1/2 pound) loaf, wheat setting.

Butterhorns

1-1/2 cups water
1 large egg
3 Tbsp. unsweetened applesauce
1/4 cup sugar
3 Tbsp. nonfat dry milk powder
1 tsp. salt
4 cup flour
3 Tbsp. melted butter

Mix first seven ingredients in the ABM, select dough cycle. When cycle is complete remove dough to a floured surface. Divide into two equal pieces, roll pieces into ball then using a rolling pin roll out into a 9" sized circle. Brush circle w/ half the melted butter. Use a pizza cutter and cut circle into 8 equal triangles. Starting at the wide end roll each triangle up and curve into a crescent shape. Place on an ungreased baking sheet. Repeat with second ball of dough. Cover and let rise until doubled, about 15 minutes. Heat oven to 350ºF. and bake for 12-15 minutes.

Buttermilk Bread
from Fleischmann's Yeast
1-2/3 cups buttermilk
2 Tbsp butter or margarine, cut up
4 cups bread flour
2 Tbsp sugar
1-1/2 tsp. salt
1/4 tsp. baking soda
1-1/2 tsp. bread machine yeast

Buttermilk Cheese Bread
1-1/8 cups buttermilk or 4 Tbsp. buttermilk powder plus 1-1/8 cups water
1 tsp. salt
2 Tbsp. sugar
3/4 cups grated extra sharp cheddar cheese
3 cups bread flour
1 package yeast, or 1-1/2 tsp. bread machine yeast

Place in bread pan in order recommended by manufacturer. Set on light or medium cycle.

1/3 cup buttermilk, at room temperature
1-1/8 cups warm water
1-1/2 tbsp oil
2-1/4 cups bread flour
1 cup plus 2 tbsp rye flour
1-1/2 tbsp dark brown sugar
1-1/2 tsp kosher salt
1-3/4 tsp yeast
1-1/2 tbsp caramel coloring, optional

Add all ingredients in the order suggested by your ABM manual and process on the basic bread cycle according to the manufacturer's directions.

2 cups white bread flour
1 Tbsp. dry milk
1/2 tsp. salt
1 Tbsp. butter
1 Tbsp. brown sugar
1 Tbsp. Cajun spice blend
2 tsp. tomato paste
1/2 tsp. onion paste
1/4 tsp. parsley flakes
2 tsp. yeast (active dry)

Add ingredients according to manufacturer's directions and bake! This may also be done on the dough cycle and oven baked

Carrot Thyme Bread
2-1/2 tsp. active dry yeast
1 cup rye flour
2-1/4 cups bread flour
1/2 cup cornmeal
1-1/2 Tbsp. white sugar
1-1/2 Tbsp. dried thyme
1-1/2 tsp. salt
1 cup water
2 cups grated carrots
3 Tbsp. vegetable oil

Place the ingredients in the bread machine pan in the order suggested by the manufacturer. Select Basic Bread setting, and then press Start. Allow the loaf to cool before slicing.

1-1/4 cups warm water (110ºF.)
3 cups bread flour
2 Tbsp. dry milk powder
2 Tbsp. white sugar
1-1/2 tsp. salt
2 Tbsp. butter, softened

1-1/2 tsp. dried marjoram
1-1/2 tsp. dried thyme
1 tsp. dried basil
1 tsp. dried oregano
1 Tbsp. active dry yeast

Place ingredients in bread machine pan in the order suggested by the manufacturer. Select the Basic or White Bread cycle, and press Start.

Cheese-Onion Bread
3/4 cup + 2 Tbsp. water
3 cups bread flour
3/4 cup shredded Cheddar cheese (3 ounces)
2 Tbsp. sugar
1 Tbsp. nonfat dry milk
2 tsp. instant minced onion
1 tsp. salt
1-1/4 tsp. bread machine yeast

Measure carefully, placing all ingredients in bread machine pan in the order recommended by the manufacturer. Select Basic/White cycle. Use Medium or Light crust color. Do not use delay cycle. Remove baked bread from pan to wire rack; cool.

Cherry Almond Bread
16.5 ounce can sour cherries
1 tsp. almond extract
2-1/2 Tbsp. butter, softened
1 tsp. salt
1/2 cup white sugar
3-1/2 cups bread flour
2-1/2 Tbsp. vital wheat gluten
2 tsp. rapid rise yeast
2/3 cup slivered almonds

Place all ingredient, except almonds, in the bread machine according to the manufacturer's directions. Select sweet bread setting; press Start. If your machine has a Fruit setting, add the almonds at the signal, or about 5 minutes before the kneading cycle has finished.

Chocolate Chip & Coconut Bread

1 cup water
1-1/3 Tbsp. oil
1 Tbsp. coconut extract
1/4 tsp. salt
2/3 cup coconut flakes
3 cups bread flour
2 tsp. yeast
2/3 cup semisweet chocolate chips

Add all ingredients, except chips to machine according to manufacture's instructions. Select Raisin/Nut Bread Cycle and add chips at beep.
     LYNDA'S NOTE: My family says this is great! They like for me to add chopped almonds along with the coconut for "Almond Joy Bread!" (about 1/2 cup toasted almonds - piece)

Cinnamon Bread
1-1/4 cups warm water (110ºF.)
2 Tbsp. margarine, softened
3-1/4 cups bread flour
1/4 cup white sugar
1-1/2 tsp. salt
1 tsp. ground cinnamon
3-1/2 tsp. active dry yeast
3/4 cup raisins

Place ingredients in order suggested by your manufacturer. Select the sweet bread and light crust settings. Add raisins when indicated by your manufacturer.

Cinnamon Cranraisin Bread
3/4 cup warm water
1 egg, lightly beaten
1 Tbsp. margarine
2 2/3 cups all-purpose flour
3 Tbsp. dry milk powder
2 Tbsp. white sugar
2 tsp. ground cinnamon
1 tsp. vanilla extract
1 tsp. salt
1-1/2 tsp. active dry yeast
1/2 cup sweetened dried cranberries (Cranraisins)

Place warm water, egg, butter or margarine, flour, powdered milk, sugar, cinnamon, vanilla, salt, and yeast into the bread machine in the order suggested by the manufacturer. Start the machine. After the first rise, add the cranraisins. Continue baking.

Cinnamon-Nut Raisin Bread
1-3/4 tsp. active dry yeast
3 cups bread flour
1 tsp. salt
1 Tbsp. dark brown sugar, packed
1/2 Tbsp. granulated sugar
1/2-1 tsp. ground cinnamon, to taste
2 Tbsp. nonfat dry milk
2 Tbsp. vegetable oil
1-1/4 cups water
1/2-1 cup raisins
1/2 cup chopped nuts

Place all but raisins and nuts in bread pan in order recommended by manufacturer. Set on light or medium cycle. Add raisins and nuts at raisin/nut cycle or 5 to 10 minutes before last kneading cycle ends.

Cinnamon Raisin Swirl Bread
1-1/2 cups warm water
2 Tbsp. milk
2 Tbsp. shortening
1 tsp. salt
4 cups bread flour
3 Tbsp. white sugar
2 tsp. active dry yeast
1 cup raisins
2 Tbsp. butter, softened
2 Tbsp. brown sugar
1 tsp. ground cinnamon
1 Tbsp. butter, melted

Place water, milk, shortening, salt, flour, sugar and yeast in the pan of the bread machine in the order recommended by the manufacturer. Select cycle; press Start. If your machine has a Fruit setting, add the raisins at the signal, or about 5 minutes before the kneading cycle has finished. Take dough out after first kneading cycle has finished. Turn dough out onto a lightly floured surface and roll out into a rectangle. Spread dough with butter, brown sugar, and cinnamon. Roll dough, and divide into two parts. Place loaves in two lightly greased 9x5" bread pans. Cover and let rise in a warm place until doubled in size, about 1 hour. Preheat oven to 350ºF. Brush tops of risen loaves with melted butter and bake in preheated oven for 30 to 40 minutes, until crust is brown and loaves sound hollow when tapped. Makes 2 loaves.
