Every one who comes to share our Thanksgiving feast with us, gets a mini loaf of this special bread...
But, don't limit this to just Thanksgiving...its a wonderful gift for Christmas or anytime!!
Just wait till you get a whiff of these little beauties baking!!
Very aromatic!!!!

This bread is a wonderful make ahead goodie to have on hand, it freezes well (up to 2 months).

Have surprise guests? Or get a surprise invitation?
Offer them a mini loaf of this bread with one of those single pot packages of ground coffee...Great, easy (inexpensive) gift! Hope you enjoy it!

Now, if you want, you can make 2 large loaves instead of the small ones.
Pumpkin Cranberry
Nut Bread

1 (16 oz) can Whole Cranberry sauce
1 cup molasses
1 (15 oz) can solid pack Pumpkin
1/2 cup vegetable oil
4 eggs
1 cup walnuts, chopped
3 1/2 cups all purpose flour
1/4 cup wheat germ*
1/4 cup regular sugar
1/2 cup firmly packed brown sugar
2 1/2 tsp baking soda
2 tsp pumpkin pie spice
3/4 tsp salt
1 tsp baking powder
(*If you don't have wheat germ,
just use flour, but the wheat germ really adds texture)

Preheat oven to 350º.
Combine all wet ingredients in a large bowl, until well blended.
Combine all dry ingredients in smaller bowl.
Add dry stuff to the wet ingredients, blending until just moistened.
Spray loaf pans (bottoms only) with vegetable spray.
Divide batter between 5 or 6 small foil loaf pans. (or 2 regular size loaf pans)
Bake about 65 minutes for 2 full size loaves, or about 35-45 minutes for small ones or until tests done.
Cool completely.

I wrap in foil and put bows on each.
Store in fridge
To serve, bring to room temp.
Wonderful alone, or with regular or honey butter!
