Ingredients:
6 Turkey Bacon slices ($0.40 - 12oz $1.50)
Some diced ham (8 oz $2.10)
5 lbs potatoes ($0.60)
Cheddar Cheese ($2.00 for 1 lb block)
Minced onion flakes or real onion
Butter
Slice potatoes into half dollar sized pieces, one half inch thick. Cut the turkey bacon into little pieces and place in skillet with the diced ham and add some minced onion flakes. To save time, I cook the potatoes in a pot of boiling water with butter and onion flakes until potatoes are just turning soft. Then I add them to the skillet with the ham and bacon. Add butter to taste. Grate the cheese. When potatoes are soft and tender and starting to brown, I call it done. :)
I dole out portions and place some grated cheese on top. The kids and I love to add toast with it and I think eggs would also go along well.
This will feed two adults and four children at two servings each, it should be easy to cut in half. It is also good as a leftover. I haven't yet checked for freezability.
Meal cost - $5.10 for entire meal/$0.85 per person/$0.43 per serving.
