Ham &Cheese Potato Skillet Meal

Ingredients:

6 Turkey Bacon slices ($0.40 - 12oz $1.50)
Some diced ham (8 oz $2.10)
5 lbs potatoes ($0.60)
Cheddar Cheese ($2.00 for 1 lb block)
Minced onion flakes or real onion
Butter

Slice potatoes into half dollar sized pieces, one half inch thick. Cut the turkey bacon into little pieces and place in skillet with the diced ham and add some minced onion flakes. To save time, I cook the potatoes in a pot of boiling water with butter and onion flakes until potatoes are just turning soft. Then I add them to the skillet with the ham and bacon. Add butter to taste. Grate the cheese. When potatoes are soft and tender and starting to brown, I call it done. :)

I dole out portions and place some grated cheese on top. The kids and I love to add toast with it and I think eggs would also go along well.

This will feed two adults and four children at two servings each, it should be easy to cut in half. It is also good as a leftover. I haven't yet checked for freezability.

Meal cost - $5.10 for entire meal/$0.85 per person/$0.43 per serving.

Sausage and Potato Skillet Meal

Ingredients:

1 lb Link Sausage ($1.99)
5 lb Potatoes ($0.75)
2 cans Green Beans ($1.20)
Minced onion flakes or real onion (on hand)
Butter (on hand)

Cut potatoes up into half dollar size pieces no more than half an inch thick. To save time you can boil the potatoes in a pot of water with onion flakes and buter until they just start to become soft. Slice the sausage into half inch thick pieces. Heat sausage in the skillet with minced onion flakes added. When sausage is heated and potatoes are soft, add the potatoes to the skillet and add butter to taste. I do the green beans two different ways. If I am doing fresh or frozen, I add the beans directly into the skillet when the potatoes get soft. If I am doing canned green beans, I will dole out the portions and then spoon green beans on top of them and then mix it up on each kids' plate. This helps keep the canned green beans from getting soft and mushy in the skillet.

Sometimes we eat this with bread and butter.

This serves two adults and four children at two servings each. It should be pretty easy to half for a smaller family.
