To find out about courses, read the info on the course website, or phone the department and ask them to send you some course information. You can find out which courses are thought better than others, if you know of anyone working in the field, or if any of your friends know someone. However course reputations usually run 5-10 years behind reality (or so I've heard), and the most popular course may not be the best one for you anyway. You can also compare student ratings of the courses using the GCCA Course Experience Questionnaire data.
This data comes from a Course Experience Questionnaire (CEQ) run by the Graduate Careers Council of Australia (GCCA) and given to all university graduates each year.
The questionnaire consists of the:
Good teaching scale (six questions)
Clear Goals and standards scale (four)
Appropriate assessment scale (three)
Appropriate workload (four)
Generic skills (six)
Overall satisfaction (one)

The mean results for each scale for each university program are published on the GCCA Website. The maximum score in any category is 100 while the minimum is -100. The means of each program all over Australia are also published.
You can also find student ratings of courses by looking in commercial guides to university and TAFE courses, available at bookstores. I don't know how accurate either of these is. Visiting the course coordinator might also give you a feel for how the course is likely to be, or you could talk to students doing the course.
