Season's Greetings!


Halloween Eve


Come all ye creatures of the night, my oh my ... what a frightful sight! Vampires, goblins and ghosts, hope for goodies they like the most. Heroes, elves and angels with silvery wings, happily run through the streets full of spooky things. Tap, tap, tap on the door, please oh please, may we have more? Then finally it's off to their beds, oh those little sleepy heads.

Now for something to drive you batty!
Pumpkin Roll!

Ingredients

3 eggs
1 cup sugar
2/3 cup canned pumpkin
1 tsp. lemon juice
3/4 cup flour
1 tsp. baking powder
2 tsp. cinnamon
1 tsp. ginger
1/2 tsp. nutmeg
1/2 tsp. salt
1 cup finely chopped walnuts
1 1/4 cups powdered sugar
1 - 8oz. package cream cheese
5 1/2 Tbls. butter
3/4 tsp. vanilla

Directions:


Beat eggs on high speed for 5 minutes. Gradually beat in sugar. Stir in pumpkin and lemon juice. In separate vowl mix flour,baking powder,cinnamon,ginger,nutmeg,and salt. Fold into pumpkin mixture and spread into greased and floured 15x10x1 inch pan. Top with walnuts and bake at 375* for 15 minutes. Turn out on towel sprinkled generously with powdered sugar. Starting at narrow end, roll towel and cake together. Cool. Unroll for filling. FOR FILLING; Combine powdered sugar,cream cheese,butter,and vanilla. Beat until smooth. Spread over cake and roll back up.



Pumpkin Bread


1 cup butter or margarine
3 cups granulated sugar
2 eggs
2 teaspoons baking soda
1 1/2 teaspoons pumpkin spice
1 teaspoon salt (optional)
1/2 cup water
2 cups pumpkin
3 1/2 cups flour

optional ingredients:


1 -2 cups chooped nuts
1 - 2 cups raisins
1 -2 cups choco chips
(we seem to prefer 2 cups choco chips)

Directions:


Cream butter and sugar together. Beat in eggs. Add baking soda, pumpkin spice and salt; mix well. Stir in pumpkin and water. Gradually add flour. If desired add any or all of the optional ingredients. Pour into greased, flour loaf pans. Top with walnut pieces, if desired. Bake at 350 for an hour (slightly longer for glass pans). Makes 3 full size loaves or 5 - 6 mini loaves. Freezes very well!
