STUFFED SHELLS

WITH MEATBALLS, ITALIAN SAUSAGE, AND GREEN PEPPERS

INGREDIENTS

2 pds. Italian sweet sausage

2 pds. ground beef (chuck)

3 (28 oz) crushed tomatoes (Red Pack)

1 large can of tomato paste

2 cups water

1 cup sugar

1 teaspoon oregano or basil

1 tablespoon parsley

1 clove garlic

1 cup chopped onion

bay leaf

1 teaspoon crushed pepper

salt and pepper

1 green pepper

1 1 cup bread crumbs

3 eggs

4 tablespoons vegetable oil

PROCEDURE:

1. Mix chopped meat, 1 cup onion, bread crumbs, eggs, milk, salt and pepper

2. Form meatballs

3. In separate pan, fry sausage, rest of onion, in same pan. Fry in oil until well browned. (high heat first) ; then cook on low heat for dark browning. Collect renderings into pot.

4. Add other ingredients into same pot ( except tomato paste.)

5. Cook for 1 1 hours covered (

6. Take out sausage and meatballs, add tomato paste, and simmer for 1 more hour. (Add water if too thick after adding tomato paste).

7. Fill oven proof dish with about one inch of sauce in the bottom

8. Put in stuffed shells (bought without sauce), cover with foil and bake at 450 degrees for 30 minutes

9. Cook peppers for about 5 minutes and serve with meatballs and Italian sausage separately from shells.
