The following Indian potato recipe is also a vegan recipe in that it has no ingredients that derive from animal products or animal by-products. Vegan recipes are plentiful; from an ingredient-point-of-view, one only has to ensure that the ingredients do not contain animal products or animal by-products, including fish or poultry, and any by-product of fish or poultry. The following Indian potato recipe abides by that criteria.

Indian Potato Recipe : Indian-Style Potato Dish Recipe

4 cloves garlic, minced finely
2 teaspoons oil
1 large green pepper, chopped finely
3/4 cup shredded coconut
3 large potatoes, diced
3 ripe tomatoes, chopped finely
Pepper, to taste
Salt, to taste
1 1/2 cups water

Yields 6 servings.

  1. Sauté garlic in oil over medium heat for 30 seconds.
  2. Add green pepper and coconut; lower heat.
  3. Add potatoes, tomatoes, seasonings and water.
  4. Bring to a boil and simmer 40 minutes.
  5. Stir occasionally.
  6. Serve hot.
