Cool'n'Easy Pie

COOL 'N' PIE

Ingredients:

 

2/3 cup boiling water

1 pkg. (4-serving size) gelatin dessert, any red flavor

1/2 cup cold water

Ice cubes

1 tub (8 oz.) whipped topping, thawed

1 cup chopped strawberries

 

1 6 oz. prepared graham cracker crumb crust

 

Directions:

 

Stir boiling water into gelatin in large bowl at least 2 minutes until

completely dissolved.

 

Mix cold water and ice to make 1 1/4 cups. Add to gelatin, stirring until

slightly thickened.

 

Remove any remaining ice.

 

Stir in whipped topping with wire whisk until smooth. Mix in strawberries.

 

Refrigerate 20 to 30 minutes or until mixture is very thick and will mound.

 

Spoon into crust.

 

Refrigerate 6 hours or overnight until firm. Garnish as desired.

 

Store leftover pie in refrigerator.

Serves: 8

Cornbread - Easy but Amazing

Just found this recipe and loved it --

 

Mix 2 boxes Jiffy or Martha White corn bread mix and 1 regular yellow cake

mix. Add all the other ingredients that both mixes call for and bake in 13x9

pan.

 

Makes a great cornbread.

Easy Au Gratin Potatoes

1 can cream of chicken soup

2/3 cup milk

salt and pepper to taste

6 potatoes, thinly sliced

2 T onion, finely chopped

1 cup grated Cheddar cheese

.

Combine soup and milk; add salt and pepper. Put half of

potatoes in a greased casserole pan. Pour half of soup

mixture over potatoes. Sprinkle with half of cheese. Repeat

the layers. Cover and bake at 350 degrees for one hour.

Uncover and bake another 30 minutes until potatoes are tender.

EASY BEEF STROGANOFF

(Serves 4)

 

Ingredients:

3/4 lb. boneless Beef Sirloin Steak, 3/4-inch thick

1 tsp. Olive Oil

14-oz. can Beef Broth with Onion

2 cups fresh Mushrooms, sliced

3 cups uncooked Egg Noodles

1/2 cup Sour Cream

 

Slice the sirloin into very thin strips across the grain of the steak.

 

Warm the olive oil in a non-stick skillet over medium-high heat. Brown the

steak pieces for about 5-minutes, stirring often.

 

Add the seasoned beef broth and mushrooms. Bring the mixture to a boil and

stir in the dry noodles.

 

Reduce the heat, cover and cook over a simmer for about 10-minutes, or until

the noodles are cooked through.

 

Stir in the sour cream and let it warm through the mixture. Serve

immediately.

Easy Breakfast Nacho Bake

EASY BREAKFAST NACHO BAKE

8 ounces bulk breakfast sausage, cooked, drained and crumbled

4 large eggs, lightly beaten

1/4 cup sliced green onions

2 tablespoons melted butter

1 package tortilla chips, coarsely crumbled

2 cups shredded cheddar cheese

1 (16-oz.) jar Ortega Salsa Prima

 

Preheat oven to 350 degrees F.

 

Combine sausage, eggs and green onions in medium bowl.

 

Pour butter in medium baking dish; add sausage mixture. Top with chips;

sprinkle with cheese.

 

Bake for 10 to 12 minutes or until eggs are set and cheese is melted; top

with salsa.

EASY CARAMEL CAKE

EASY CARAMEL CAKE

Ingredients:

Yellow Cake Mix, plus Eggs and Oil as directed

2 cans Sweet and Condensed Milk

1/2 cup toasted Pecans, optional topping

 

Using your favorite yellow cake mix, bake a cake in a 9-inch by 13-inch pan.

 

Place two cans of condensed milk in a boiler, cover with water (about and

inch over the cans). Boil for 2 1/2 hours. You will need to add water, to

ensure the cans stay covered.

 

Remove the cans of milk from water, let cool 8-10 minutes. Open slowly, and

very carefully.

 

Spread the delicious caramel frosting on the cake. Sprinkle with toasted

pecans. Slice to serve.

Easy Caramelized Onion Pork Chops

Cook Time: 40 Minutes

Ready In: 45 Minutes

Makes: 4 servings

 

"Five minutes of preparation, and then you can relax while the chops and

onions simmer on the stove. Great with parsley potatoes!"

 

Ingredients

1 tablespoon vegetable oil

4 (4 ounce) pork loin chops, 1/2 inch thick

3 teaspoons seasoning salt

2 teaspoons ground black pepper

1 onion, cut into strips

1 cup water

 

Directions

1. Rub chops with 2 teaspoons seasoning salt and 1 teaspoon pepper, or to

taste.

 

2. In a skillet, heat oil over medium heat. Brown pork chops on each side.

Add the onions and water to the pan. Cover, reduce heat, and simmer for 20

minutes.

 

3. Turn chops over, and add remaining salt and pepper. Cover, and cook until

water evaporates and onions turn light to medium brown. Remove chops from

pan, and serve with onions on top.

Ingredients:

 

2 teaspoons oil

1 broiler-fryer chicken, cut up

1 envelope Italian salad dressing mix

1 jar chunky style spaghetti sauce

hot cooked rice

 

Directions:

 

Heat oil in large skillet. Add chicken; cook until chicken is browned on all

sides. Sprinkle salad dressing mix over chicken. Add spaghetti sauce. Bring

to a boil. Reduce heat to low; cover. Simmer 25 to 30 minutes or until

chicken is cooked through, stirring occasionally.

Serve over hot cooked rice.

Easy Chicken Salad

2 c. ground or finely chopped chicken

2 tsp. onion, chopped fine

1/2 c. mayonnaise

1/2 tsp. celery salt

1/2 c. celery, chopped fine

1/3 c. sweet pickle, chopped fine

1 tbsp. lemon juice (can use pickle juice)

 

Mix all together. Keep cool until ready to use.

Easy Chinese Egg Rolls

1 1/2 lb. of cooked hamburger

1 large package of coleslaw

1 package of Egg Roll skins (found in the fresh vegetable aisle)

Salt and pepper to taste- use less if using soy sauce

2 tablespoons of Soy Sauce (optional) but you don't have to have it

One small bowl of flour mixed with water to form a thick paste

 

In a very large bowl pour cole slaw into it from the package. Cook hamburger

meat until done and drain well. It is important that is be drained good.

Add salt and pepper to taste. Add soy sauce. (optional)

 

Mix all of the above ingredients together. Mix thoroughly.

 

Make a paste with about 1 cup flour and just enough water to form a thick

paste (a little thicker than what elmers glue consistency looks like. (Sorry

but I couldn't think of an example of a type of paste like item.)

 

Take out your egg roll skins one at a time from package. Be sure and keep

the remainder of the egg roll skins sealed so they don't dry out.

 

With egg roll skins in front of you place them so as they appear the way a

diamond shape would be. Add The hamburger and coleslaw mixture directly in

the center of the egg roll skin. I use about 3-5 tablespoons of filling.

Depending on how large you want them to be. Don't add too much or the skins

won't hold it all.

 

With a pastry brush or your clean fingers brush all sides of the skins with

the flour paste.

Roll up into egg roll fashion. Being Roll the bottom point away from you.

The right side

towards the left. And the left side towards the right. Then roll it up and

away from you.

Seal the edges of the corners all the way around. You can add more paste of

it is not sealed tightly to the edges.

 

The instructions are usually on the egg roll packages on how to roll them up.

Same as a burrito.

 

In very hot grease place two egg rolls in at a time with tongs and fry until

brown. Usually 1-2 minutes. Place on paper towels in a 13x9 pan. Enjoy.

 

These also can be frozen when cooled. Just place the cooled egg rolls into

clear plastic bags and freeze. When ready to eat, just defrost in microwave

and reheat.

 

Enjoy.

 

These are easy to make once you make them the first time and get the general

idea.

They are good for a grab on the run snack also.

Easy Chocolate Banana Cake

Easy Chocolate Banana Cake

1 (18.25 ounce) package white cake mix

1/3 cup vegetable oil

4 eggs

8 ounces sour cream

8 tablespoons cocoa powder, unsweetened

1/2 cup semisweet chocolate chips

1 banana, peeled and mashed

 

Preheat oven to 350 degrees F. Lightly grease and flour one 9x13 inch pan.

Mix together cake mix, oil, eggs, sour cream, cocoa, chocolate chips, and

banana, and beat for two minutes. Pour into prepared pan.

Bake at 350 degrees F for 35 minutes. Let cool in pan and dust with powdered

sugar if desired.

Easy English Toffee (Makes One 9-inch Round)

 

Ingredients:

 

1 1/2 cup Walnuts, chopped

1 cup Brown Sugar, firmly packed

10 Tbs. Butter (No substitutions)

3/4 cup Chocolate Chips

 

Sprinkle walnuts in the bottom of a 9-inch round cake or pie tin.

 

Combine sugar and butter in a 1 1/2 quart saucepan. Cook and stir over medium

heat until attaining a 290-F degree temperate on a candy thermometer.

 

Make sure to stir your toffee constantly while melting the brown sugar and

butter.

 

Remove the melted toffee from the heat source and cool slightly for about 5

minutes.

 

Pour the mixture over the top of the walnuts in the round pan and spread out

in an even layer. Immediately sprinkle the top with the chocolate chips.

 

Let them melt from the heat of the toffee, then gently spread the melted

chocolate over the top of the hardening candy.

 

If desired, sprinkle a few more chopped or ground walnuts on top of the

chocolate while it's still soft and warm.

 

Cool at room temperature until hard, at least 2 hours, then break into pieces

and store in an airtight container.

1 env. (5 serving) instant mashed potato granules or flakes

2 tbsp. sugar

1 c. raisins (optional)

Combine Bisquick, potato granules and sugar in a mixing bowl. Add raisins

and caraway seeds. Stir in milk until blended. Spoon into well greased 8

inch pie pan. Bake at 350 degrees for 45-50 minutes until deep golden brown.

8 ounces uncooked spiral pasta

2-1/2 cups assorted cut-up fresh vegetables (broccoli, carrots, tomatoes,

bell peppers, cauliflower, onions and mushrooms)

1/2 cup mozzarella cheese, cubed

1/3 cup pitted ripe olives

1 Cup Italian dressing

Italian Salad dressing

3/4 Cup Olive oil

1/2 Cup Red wine vinegar

1 tbs. Grated parmesan

1 Clove garlic, minced

1/2 tsp. Salt

1/2 tsp. Sugar

1/2 tsp. Dried oregano

pinch Pepper

.

In a jar with a tight fitting lid, combine all ingredients and shake well.

Refrigerate.

Cook pasta according to package directions; drain and rinse with cold water

until completely cool.

In large bowl, combine all ingredients except Italian dressing. Add dressing;

toss well. Serve chilled or at room temperature.

If chilling, add more salad dressing and then toss again before serving.

GOLDEN LEMON CAKE

 

Ingredients :

1 c. shortening (butter)

2 c. sugar

2 tsp. lemon rind, grated

1 tsp. lemon extract

2 2/3 c. cake flour, sifted

3 tsp. baking powder, double acting

1/2 tsp. salt

1 c. milk

 

Preparation :

Beat shortening and sugar until light. Beat eggs in one at a time

and keep beating until grain of sugar is smooth. Beat in lemon rind

and flavoring. Combine sifted flour, baking powder and salt and

sift twice. Then blend them into beaten mixture about 1/4 at a time

alternately with the milk. Mix well, but don't beat in this

blending. Pour batter in a greased tube pan. Bake in a preheated

oven at 350 degrees for 45 - 50 minutes.

Pour into greased fluted tube pan. Bake at 350 degrees for 70

minutes or until cake tests done. Turn out onto rack to cool. For

glaze, combine all ingredients and drizzle over cooled cake.

3. In a medium bowl, combine milk, eggs, mustard and pepper. Divide between

the muffin tins.

 

4. Bake in preheated oven for 20 minutes, or until a toothpick inserted into

When we are short on time I have a couple of one-dish meals I use, this one

is my husband's favorite.

 

3 large chicken breasts boneless and skinless

1 - 1 1/2 c. rice uncooked

2 cans cream of mushroom or cream of chicken soup (what ever I have)

 

Preheat oven to 350 degrees.

1. In a 9x13 glass baking dish put the chicken breasts.

2. Add rice and soups add milk or water according to the directions on the

soup can.

3. Cook at 350 degrees until chicken and rice is done.

Here is one of my favorites. It only has 4 ingredients and you can get it on

the table in less than 15 minutes.

 

1/2 head Savoy Cabbage - shredded coarsely

1-inch piece of Ginger root, peeled andcoarsely chopped or sliced

1 Tablespoon vegetable oil

1 Can Red or pink salmon

 

Heat oil in skillet and saute ginger for about 1 minute. Add cabbage and

toss until it glissens with the oil. Drain and chunk the salmon. Add to the

skillet and toss. When all the ingredients are hot and the cabbage has

wilted somewhat, serve and enjoy. If you have it, a light drizzel with

sesame oil right before serving adds a nutty flavor.

I don't know how your tastes run but a friend of mine told me she makes this

fast and it is very low fat and good.

 

Take a couple of frozen, skinless, boneless chicken breasts, rinse under

water and then cut them in good bite size pieces. Throw them in a hot

skillet (iron is best) and brown them in a tablespoon or two of vegetable

oil. After they are just browned, add a potato for each breast that you use,

also cut up into large bite size pieces. Add barbeque sauce and simmer until

all is tender. All bbq sauces are different, so if yours is thick, you add

water. You need to watch it and turn the mixture frequently because the

sugar in the bbq sause will burn. Cover it until almost to the last minute

 

I know bbq sauce and potatoes might sound strange but it is good.

 

I hope you also know that a baked potato smothered in chile is a great little

supper.

1 can cream of anything soup (I use mushroom)

Easy Oven Chicken

1 (3-lb) broiler-fryer, cut in pieces (or I used the boneless breasts)

1/4 cup flour

1 (2 oz) can sliced mushrooms

1 (5.33) can evaporated milk

1 (10 3/4 oz) can cream of mushroom soup

1 cup grated American cheese

1/4 tsp salt

1/4 tsp pepper

Dash of paprika

Coat chick with flour. Arrange in a 9x13-inch well-greased pan. Bake

uncovered for 30 minutes at 425º. Turn chicken and bake 15-20 minutes

longer. Remove from oven, reduce heat to 325º. Pour off fat. Pour off fat.

Combine mushroom (including liquid), milk, soup, cheese, salt and pepper.

Pour over chicken. Sprinkle with paprika. Cover with foil and bake 20

minutes longer.

Here is any easy dessert recipe.

 

Peach Cobbler!!!!

 

2 cans 29 oz sliced peaches

1 mix of Duncan Hines Golden Butter cake mix

ground cinnamon

1 stick of real butter

 

Begin by pouring both cans of peaches & peach juice in bottom of

glass pan (must be glass) cut the slice peaches in half & sprinkle cinnamon

on top.

 

Now cover the peaches & cinn. w/the cake mix (make sure there are no dry

lumps in the mix.

 

Then on top of the cake mix cut up the stick of butter (into thin squares) &

cover the top.

 

Sprinkle with cinnamon & bake in the oven at 350 degrees for 1 hour in a gas

oven & 40-45 minutes in an electric stove.

 

That's it.

1 3/4 tsp. baking powder

1 egg

1/2 c. milk

Sift together first 4 ingredients and add last 4 ingredients to

sifted mixture.

 

Beat 3 minutes at low to medium speed.

 

Cover greased 9-inch round cake pan with 1/4 cup firmly packed brown sugar

and 2 tablespoons melted butter.

 

Arrange small can of crushed pineapple and maraschino cherries in sugar.

 

Pour batter over fruit and bake at 350 degrees for 35-40 minutes.

 

Serves 8.

Directions:

I love this Pot Roast recipe because it is easy to make in a roasting bag

which you can purchase at your local grocery store.

 

If you cannot or do not want to use a roasting bag you can use a standard

roasting pan. If using the roasting pan, make sure to first brown the meat

in a heavy pan before transferring to the roasting pan.

 

Enjoy!

 

PS: I like to add a dash or two of hot sauce to the liquid mixture. You can

also use beer instead on water in this recipe. Use your favorite brand.

The secret to a tender pot roast is to never to let the liquid boil. Boiling

will toughen the meat.

 

Preparation Time: under 10 minutes

Cooking Time: 1 1/2 hours

Serves: 8 female bytes or 6 male bytes

 

INGREDIENTS

 

3-4 lb Roast (boneless chuck or rump roast)

2 C Water

1 env Dry Onion and Mushroom soup mix

1 T Worcestershire sauce

3 Potatoes, peeled and chopped

2 Stalks celery, chopped

2 Carrots, chopped

1 Onion or handful of boiling onions

1 sprig Fresh Thyme

 

Preheat oven to 350F.

Score roast on top and sides, and place in a medium sized oven bag. Combine

water, soup mix, and Worcestershire sauce; pour over roast.

 

Arrange vegetables around meat and add sprig of thyme.

 

Place oven bag on a roasting pan.

 

Place roast in oven, and reduce heat to 300F (150C).

 

Bake for 1 1/2 hours for medium well done, or adjust time for desired

doneness.

2 cups sour cream

1 can condensed cream of chicken soup

1 cup chopped green onion

1 cup corn flake crumbs

2 tablespoon butter or margarine, melted

 

Directions:

 

Mix potatoes, sour cream, cheese, soup and onions in large bowl. Spoon into

greased 13x9-inch baking dish. Toss crumbs and butter; sprinkle over potato

mixture. Bake at 375°F for 1 hour.

Here is a Potato Soup recipe that uses ingredients that I usually have on

hand. Tastes good, too!

 

POTATO SOUP

 

1 medium onion, chopped

2 T.butter

10 potatoes, peeled and diced

1 sm. carrot grated (optional)

2/3 C.milk

1 1/2 T flour

4-6 slices American or Velveeta Cheese

1 tsp. parsley or celery flakes

6 C. water

2 slices bacon cooked and crumbled

Salt and pepper to taste

 

In large pot, saute onion in butter until clear. Add the 6 cups of water and

the diced potatoes. Add salt and pepper, celery or parley flakes and chopped

or grated carrot. Cook until potatoes are done and start to fall apart. Use

an electric mixer or potato masher to break up any large pieces, leaving some

potato pieces intact. Shake flour and milk together in jar or other

container and add to soup mixture. Break up cheese and bacon and add to

soup. Add more salt and pepper if needed.

1 (16 ounce) can whole peeled tomatoes, chopped

1/2 teaspoon oregano

salt to taste

Directions

Sprinkle over filling and cake mix.

 

Cook on high for 10 minutes, rotating dish 1/4 turn every 3

minutes.

4 Tyson(r) Thin & Fancy Chicken Breast Fillets

1/4 cup fat free sour cream

1/2 cup grated Parmesan cheese

1 teaspoon dried basil leaves

1/4 teaspoon onion salt (optional)

 

Directions

 

1 PREP: Heat broiler. CLEAN: Wash hands. Spray foil-lined baking sheet with

nonstick cooking spray. Place chicken on baking sheet. CLEAN: Wash hands. In

small bowl, blend remaining ingredients.

 

2 COOK: Broil chicken 5 minutes 4 to 6 inches from heat. Turn chicken over

and spread evenly with sour cream mixture. Broil about 2 minutes more or

until topping is puffed and lightly browned and internal juices of chicken

run clear. (Or insert instant-read meat thermometer in thickest part of

chicken. Temperature should read 170 degrees F.)

 

3 SERVE: Serve with green beans, sliced French bread and lemon tart, if

desired.

 

4 CHILL: Refrigerate leftovers immediately.

MARIE'S SHRIMP SCAMPI & EASY SHRIMP SCAMPI

MARIE'S SHRIMP SCAMPI

 

from my Italian friend Marie

 

approx. 1 lb. extra large shrimp (small shrimp don't really cut it)

2 tbls. butter

2 tbls. olive oil (must be olive)

2 gloves of garlic, either crushed or chopped

1/4 cup dry white wine

handful of chopped parsley-2 to 3 tbls.

4 tlbs. of lemon

pinch of red pepper seeds (optional) only if you like a zip of hot

 

Shell & devein shrimp, pat dry very well (this is important) must be dry.

 

Add butter & olive oil to frying pan, when it becomes hot, put in shrimp &

cook for one minute on one side, turn them over to cook 2 min. on other side,

this is when you throw in the crushed or sliced garlic, (add red pepper

seeds now if you are using them)

 

After 2 min. remove shrimp from frying pan, then add white wine & lemon juice

to frying pan & boil for approx. 45 seconds & while boiling, scrape any brown

bits from bottom of frying pan, shut off heat, return shrimp to frying pan &

add the chopped parsley.

 

When I make this, I generally make rice & serve it over the rice, delish.

Recipe can be doubled, but you have to use two frying pans, as you do not

want to overcrowd all the shrimp.

 

You can add more lemon at this point, or during recipe if you really like

things more lemony, same with garlic, but I find the two cloves are about

right, but some people like tons of garlic, I don't, it overpowers any dish.

EASY SHRIMP SCAMPI

 

Fresh, uncooked shrimp

Fresh garlic or garlic powder

Butter or margarine

 

Remove shells and tails from shrimp. Cut through the back of shrimp to

butterfly and remove veins. Sauté shrimp in butter and minced garlic or

garlic powder until cooked. Add parsley for a bit of color.

Paloe - Easy, cheap, nutritious and delicious!

1 cup raw rice 2 cups water and a little salt

 

1/4 lb. bacon

1 large onion

1 lb. Can Tomatoes

1 lb. Can Kidney Beans (red or pink)

 

Fry Bacon until crisp. Remove to paper towel to drain. Slice up onion and

fry until soft in bacon fat. Add can of tomatoes, cover, and let that

mixture simmer.

 

Put rice in pan with two cups of water and a little salt and let cook.

 

Add can of kidney beans to the frying pan with the other ingredients

including all the sauce.

 

When Rice is finished you will add the SAUCE to the RICE. Not the other way

around as sometimes things have more sauce or wetness and the rice will be

too soupy. Crumble up the bacon and mix it into the whole thing. You can

add the bacon before or during cooking, but it will lose its 'crispness'.

Serves 4.

 

We like to add some ketchup right before eating, not too much!!

 

Bread and butter and a cup of tea or coffee or glass of milk.

A light dessert like jello to top off supper. YUM!!

 

NOTE: You can make this with more bacon if you wish. Also, if you want to

make it less fat, pour off half of the bacon fat before adding onions. BE

SURE to use bacon fat or you will lose a lot of flavor. Reheats well the

next day, but may be a little dry. If you have extra sauce, save it IN A

DIFFERENT DISH. Then when you reheat, add the sauce before serving. Bon

Appetit!

QUICK AND EASY BARBECUE SAUCE

Quick and Easy Barbecue Sauce for Ribs and Pork Chops

1 (14 oz.) bottle ketchup

1 c. brown sugar

1 tbsp. liquid smoke

1 tbsp. Worcestershire sauce

1 tbsp. garlic salt

1/2 tbsp. salt

1 tsp. pepper

5 dashes soy sauce

 

Mix above ingredients together. Good on pork chops on grill.

RICH, EASY NEW ENGLAND CLAM CHOWDER

THIS IS A RECIPE A LADY IN MICHIGAN GAVE ME OVER 20 YEARS AGO. MY FAMILY

LOVES IT. IT'S AS GOOD AS ANY YOU'LL FIND IN A RESTRAUNT.

 

CLAM CHOWDER

 

3 CANS CREAM OF POTATO SOUP (CAMPBELLS)

3 CANS NEW ENGLAND CLAM CHOWDER "

2 CANS MINCED CLAMS, JUICE RESERVED

1 QUART HALF AND HALF

1 MEDIUM ONION CHOPPED

1 CARROT, PEELED AND CHOPPED

1 STICK BUTTER OR MARGARINE

PEPPER TO TASTE

 

DRAIN CLAMS & RESERVE JUICE. SAUTE ONIONS IN THE BUTTER UNTIL SOFT, ADD

CLAMS AND SAUTE UNTIL THEY ARE JUST TENDER.

 

IN A LARGE SLOW COOKER OR CROCK POT, MIX ALL THE SOUPS AND THE HALF AND HALF

UNTIL COMBINED. ADD THE ONIONS, CLAMS, RESERVED CLAM JUICE AND THE CHOPPED

CARROT. PEPPER TO TASTE (GO LIGHT THE FIRST TIME YOU MAKE IT). YOU CAN

START THIS IN THE MORNING ON LOW BEFORE YOU GO TO WORK AND LET IT COOK ALL

DAY OR COOK ON HIGH UNTIL IT REACHES DESIRED

THICKNESS (USUALLY ABOUT TWO HOURS) BUT YOU HAVE TO STIR IT OCCACIONALLY.

YOU CAN ALSO COOK ON THE STOVE BUT YOU HAVE TO STIR FREQUENTLY AND ONLY SET

ON MED. LOW TO MED. TAKES ABOUT 1 - 1 1/2 HRS.

wanted easy fruit cake

EASY FRUIT CAKE

 

Ingredients :

1 boxed cake mix (yellow or white),

any brand

1/2 c. brown sugar, packed

1 can fruit cocktail

Eggs and oil per box directions

Omit water

 

TOPPING:--1/4 c. granulated sugar

1/2 stick margarine

1/2 c. milk

 

Preparation :

Prepare cake mix per box direction. Substitute fruit cocktail,

juice and fruit for water. Mix well. Batter will be thick. Grease

a 9 x 13 inch pan. Pour mix into pan then sprinkle brown sugar on

top of batter. Bake at 350 degrees for 40 to 45 minutes. Remove

from oven and cool. Pierce entire top of cake with meat fork and

pour on topping. Bring to boil, then pour over cooled and pierced

cake. Serve warm or cool.

WANTED EASY FUDGE RECIPES

one standard can of "Condensed milk" (not evaporated)

1 1/2 bags (about 18 oz.) of semi sweet chocolate chips

1 teaspoon vanilla

nuts (optional)

 

Put first 2 ingredients in a medium saucepan and heat on low until chips are

melted. Remove from heat and add remaining ingredients. Pour and spread

into a greased 8 x 8 or 9 x 9 square pan (I line mine with either wax paper

or alumnimum foil). Cool. Remove from pan and cut into squares with a heated

or greased knife.

WANTED EASY FUDGE RECIPES

FOOLPROOF FUDGE

 

2 C. Milk Chocolate Chips

1 C. Semisweet Chocolate Chips

1 14oz. can sweetened condensed Milk

1 tsp. Vanilla Extract

pinch of Salt (opt.)

1 C. chopped Walnuts

 

LINE an 8 inch square baking pan with waxed paper or aluminum foil.

In a heavy 2-qt. saucepan, COMBINE chocolate chips, condensed milk and salt.

COOK over low heat until chips melt, stirring very frequently to prevent

burning.

REMOVE from heat.

STIR in nuts, vanilla.

SPREAD mixture evenly into lined pan.

REFRIGERATE two hour or until firm.

CUT into squares.

ENJOY!

 

* When I add the nuts, I also add 2 Tbs. Southern Comfort. Makes fudge

creamier and more enjoyable. Also, kids can eat it without side effects from

alcohol. - There's not that much in it.
