Sort Of Aunt Margaret's Salad
Every family seems to have a lime Jell-O recipe of this sort. In my husband's family, it's Aunt Margaret's Salad. I think the original must have come from a Jell-O box, because I've seen this everywhere. I don't make it often, but it's okay.2 small or 1 large package lime gelatine
2 cups boiling water
1 (8 ounce) package cream cheese, softened
2/3 cup Mayonnaise
18 large marshmallows
1/4 cup boiling water
1 1/2 cup cold water
1/2 cup whipping cream, whipped
1 can crushed pineapple
1 cup chopped pecans or walnutsDissolve the gelatine in 2 cups boiling water in large mixing bowl. Soften cream cheese in bowl; add hot gelatine mixture and stir until dissolved. Melt marshmallows in 1/4 cup boiling water in top of double boiler and add gelatine mixture. Add 1 1/2 cups cold water; add whipped cream and beat mixture until it is smooth. Add pineapple and nuts. Pour into greased mould, large baking dish, or individual moulds and chill until set.
