Shepherds' Pie


Ok we start with things needed....

A deep casserole dish
(an aluminum roasting pan works well too)
Potatos-5 pounds
2 pounds lean ground beef
1 pound ground pork
or use lamb instead of beef & pork
1 medium yellow onion, chopped and minced
2 cups finely chopped mushrooms
pinch of basil
pinch of oregano
2- 1 pound (or 1- 2 pound) bags frozen corn steamed and drained,
(if u prefer, 2 cans)

The following ingredients should be room temp, or at least not cold:

5 eggs
1 pound of butter or 4 quarters of margarine
American or Cheddar cheese, 6 slices, or equivalent
1/2 cup of milk
salt and pepper

Saute onions and mushrooms and slowly brown in the mixed ground meats
and cook till done, thoroughly adding basil and oregano, and salt
and pepper to taste.

Wash and peel potatos
(u can keep the peels on if u desire, I like em like that)
Cube and boil, making sure they are extremely soft and easy to mash.

Remove meat and drain the renderings into a saucepan and heat slowly.
You can add beer, ale wine, or just water...just to stretch the gravy.
Add the gravy to the meat mix and stir together, set aside.

Drain potatos, and begin mashing while hot, add cheese, 3/4 of the
butter, eggs and milk. Keep mashing til everything melts together,
adding pepper and salt to your liking.

In a large casserole pan 4" deep or more, spread the mashed potatos
around the sides and bottom of pan, similar to a pie crust.
Add the meat mix to the bottom on the "crust", over that put the corn,
over the top of the corn add the rest of the potato "crust".
Slice the remaining butter stick and place all over the top of the pie.
preheat oven to 375 degrees.

Place casserole into the oven and bake for approx 45 mins, or til crust
turns golden brown.
