In the listings above, power is used for both power of a weapon and defense of an armor. Weight should be self-explanatory, and the time listed is the preparation time for the metal. If and when you decide to use any of the metals listed above, you must first work with the metal alone for that long before you can even start with the actual item.
After the Smith has spent enough time on the metal to work with it, they must then start working on the item itself. The first time any stats are added to the item, the Smith needs to add the number of metal units that the item requires. This is found under the "U" heading below. The Smith then spends a specified amount of time (found under "T", and is listed in minutes) working on that item. The next time metal is added, the metal cost goes down by one on that item. The cost in metal units will reach zero eventually. At that point weight is not added, but the time needed increases by 5 minutes per power unit.
In addition, the Smith doesn't have to work on the item all at once. They can leave it for a while, go do something else, then come back to the item later and work on it some more. They can't, however, work on a different item with Smith while one is waiting to be worked on. So someone making a sword could work on it for 3 hours one day, leave it for the next day, work on it for another 4 hours the day after that, and then finish it then. At that point it would have the stats of an item that they worked for 7 straight hours on. This also applies to most other jobs, such as Mechanic. If someone wants to stop working on an item they've already started, they can either finish the item and their work on it or throw it out completely.
For an example, I'll walk through a Smith forging a Steel Shortsword.
Step 1: The Smith first spends 10 minutes preparing the metal, as listed above under "Steel".
Step 2: Next, they add three units of steel, and spend eight minutes forging the sword. At this point, the shortsword now has 1 Power and 2 1/2 Weight.
Step 3: During the next eight minutes, the Smith adds two units of steel, and the sword now has 2 Power and 5 Weight.
Step 4: Next, one unit of steel is added, eight minutes are spent, and the sword now has 3 Power and 7 1/2 Weight. At this point, there is no need to add more metal, so Weight no longer increases, and is finally set to 7 Weight, dropping the half altogether.
Step 5: The Smith now spends 13 minutes working on the shortsword, and the sword now has 4 Power and 7 Weight.
So far, 6 steel and 37 minutes have been spent on the sword, resulting in 4 Power and 7 Weight. As you can see, Smithery takes quite some time, but with patience and good metals it can yeild very good results.

A Smith can work as long as they want on an item, but the weight would eventually get to the point where it would be silly to even consider using it. Remember, you have to have not only time to make the item, but metal to make it from. This leads us into the next Job, the Miner.
These guys are a little different. They can mine metals for the Smiths, and gems for the Kingdom. The time listed with the mined item is the time it takes the Miner to be able to mine the item. For example, if a Miner were to recover 3 units of gold, they would need to spend 15 minutes finding the gold, then 10 additional minutes mining each unit out of the vein. Altogether that would make 45 minutes of mining time. The listing of mined items is as follows:

Also common in many mountains, although further from the surface. 10 minutes. - Bronze
Uncommonly found, and rather deep into the land, bronze is quite a find for a Miner. 15 minutes. - Mythril
Quite rare, as it is only known to be found in two regions of the world, and is hidden very deeply into the ground. 25 minutes.
These are the metals that Smiths use most often. A Miner can dig these up and then sell them to a kingdom, Merchant, or Smith, or use them for himself if he happens to be a Smith as well. Either way, they stand to make a profit.

Rather common, and quite varied in appearance, beryl is used in many jewelery settings. 10 minutes. - Diamond
A clear, shimmering gem that is hard enough to cut through quite a bit. It is rather uncommon, though it can be found anywhere. 15 minutes. - Sun Diamond
A diamond that shines like the Sun. Very rare, and quite valuable. 25 minutes.
Many kinds of jewels and gems are included in this aspect of mining. Merchants will buy them for use in accessories, and kingdoms might take them in exchange for money.

Shiny silver is prized by some in the form of platters and other dishware, and is relatively common. 10 minutes. - Gold

These are the metals used not quite so often by Smiths. Again, you can sell them, and to just about anyone. - Copper
Now, on top of this, you have to work for 10 minutes to be able to mine out 1 unit. As you can see, mining isn't going to be easy, but it will have its benefits. Some Smiths may even give you some equipment if you get them good metals on a regular basis. Now, on to the Chemists.

This is the liquid part of the product. Most times, you will have to have a solution. Solutions come in all colors and scents, and are what you start with when making a product. - Reagent
This is the solid part of the product. You need, usually, more of this than the solution. They are found in all shapes, sizes, and colors, and are added to the solution. - Product
This is what you end up with after mixing the solution and reagent. It might have an effect, but could possibly be a failure.

Larger than most animals, and fierce when provoked, boars are a favorite among elite huntsmen. 15 minutes. Heals 35 HP. - Bear
Large animal with a lot of good meat. 25 minutes. Heals 50 HP.
Also, for every unit of food they make, they must spend an additional 10 minutes each. For Cooks, they also must have ingredients to add to the dishes. This can be any combination of Farmer or Fisher items. Some won't work, but some others will give excellent results. And now for the Scribes. - Rabbit
These people are the reason why knowledge is preserved and protected. They write information down in books and scrolls, and store those writings in libraries and vaults.

These guys are just starting out, and can only write for so long. They are limited to first level items and spells. - Book Keeper
More skilled than they used to be, but still not the best, they can make more complicated scrolls, and basic books. Limited to second level items and spells. - Secretary
Nearly masters of the art of writing, they are unmatched with a pen. They can make all kinds of books and scrolls. Unlimited level of items and spells.
Scrolls can be used to cast spells from, even if the one using the scroll doesn't know the spell. They still must have the MP to cast it, however. The same thing is true for Chemists making items. They can use a scroll to make an item that they would otherwise have no knowledge of. In either case, the scroll being used is lost. Scrolls hold one spell or item each, and the list of time is:
Lv 1: 15 minutes
Lv 2: 25 minutes
Lv 3: 35 minutes
Lv 4: 45 minutes
Books are another story altogether. Books can be used to store information about items and spells, but cannot be used to cast the spell nor make an item. Books hold four spells or items each, and require 3 times the writing time as compared to the scrolls. Books are never destroyed when used to copy spells and items, and can only be purchased from NPC merchants. Scroll paper doesn't need to be purchased; the Scribe is assumed to have a good supply at all times.
When a Scribe wants to write a spell or item into a book or onto a scroll, they have to have some source of information. Either they know it themselves, another person is there that gives them the information, or they have another scroll or book to look off of. When writing onto a scroll, another scroll cannot be used as the outside source. In other words, you can't copy one scroll directly onto another one. After the scroll or book has been made, the Scribe can give it away, sell it, or use it themselves. And all this talk about items leads us into the Merchants.
Buying and selling items is their specialty, and they do it with skill. Low-level merchants are limited in what they can sell, and are forced to sell them at the price set on the Items page. As a merchant gains experience in dealing with people, they are able to sell more items, and eventually at higher or lower prices than the Items page. No Merchant is limited in what they can buy, but they must buy at half the price listed on the items page.

Those people just starting in the art of selling items. Limited to Iron and Copper equipment, with no elements, Potions, Ethers, and Elixirs. - Shopkeeper
Learned in the ways of dealing with a customer, they have a wider range of supplies. Shopkeepers can sell elemental equipment up to Bronze and Gold, and can sell up to Ex-Potions, Ex-Ethers, and Ex-Elixirs. - Manager
Masters of selling, these people are almost unmatched on the showroom floor. Managers are unlimited in the items that they can sell, and their price can differ either way by 5%.
This job creates accessories, golems, and other non-job related weaponry and equipment.
- Toymaker
These inexperienced mechanics are able to make only small, simplistic robots and other children's toys. - Clockmaker
These people can make small, average robots with simple mechanic designs. - Jeweler
The ones who work with jewels and gems from all over the world, crafting them into fine accessories. The amulets, charms, and rings they produce can have an elemental property that is added to the wearer's attack or defense. Again, any opposite element combo cancels out both effects. - Tinkerer
Masters of little machinery, a Tinkerer can make small, magical golems and simple (sometimes enchanted) firearms. Golems can have any one elemental magic type ingrained within them, using their master's MP to cast the spells. Firearms can have one element, if added, and use rocks as the ammunition, with a gunpowder charge. - Locksmith
Those infamous characters who are responsible for building and maintaining locks, treasure boxes, and bonding of all kinds. Some fetters can actually be enchanted, causing them to be stronger than mythril chain. - Engineer
Capable of designing and building small-scale seige engines and highly complex golems, these masters of mechanics can be quite formidable even without a weapon.
An important note is that any weaponry created by these jobs disregards all stats of the user. It's not how hard (or how well) you push the button, it's the strength of the weapon that matters.
Golems are the first on our list of automatons, with stats as follows:

Golem creation follows the same metal rules as Smiths. For each addition you need one less unit than the last. So for three stat additions, you'd need a total of 15 units of Iron. Golems can use any spell of their type up to Class 3. They can also use any item their operator has in their inventory. When adding an element to a golem, add the stats for that element after the golem is completed, not for each stat increase you add. Golems use their operator's MP to cast spells, but add their own MAG (INT x3) for the spell power.
Accessories are a tad different. Accessories utilize the gems and jewels that the assorted Miners dig out of the ground. Accessories can have any number of functions, and are capable of causing a lot of effects. First of all, each stone has its own prep time and stat increase.
Crystal: 10 minutes, stat +1
Beryl: 15 minutes, stat +2
Diamond: 20 minutes, stat +3
Sun Diamond: 25 minutes, stat +4
The stat increases listed above can be in any stat, but there is a limit of +100 per stat. Adding a stat increase takes 10 minutes per increase, and requires 3 units each time. This unit number is constant, quite unlike the metal involved in golems and equipment. Elemental attributes can either be added to the attack or to the defense. This must be specified, and requires 20 minutes per element. This time doubles if another element is added. So if you wanted an amulet that added Fire to both your attack and your defense, you would spend 60 minutes just on the elements. If another stat is added, it requires 30 minutes and 2 units of the gemstone. This means that if you want to have more than one stat bonus in the same piece of jewelry, it will take some work.
