Chicken Chow Mein
(fixed the
easy way)
1 package of sliced chicken (lunch meat variety)
1 or 2 packages frozen oriental vegetables
1 package of chicken
gravy
Soy sauce as desired
1 package of small egg noodles
(swirley
kind are nice)
Now for the preparation;
Cook frozen vegetables in microwave with 2 Tbs of
water in a 2 quart covered casserole dish for 10-12
minutes for 1 pkg, 12-15 minutes for 2 pkg. Drain
water off after cooking. While vegetables are cooking heat
water in big pan on stove, boil egg noodles as directed
on pkg. Cook gravy mix on top of stove with soy
sauce poured in it. Cook to a boil. Takes about a minute
or two. Dice or cut into strips the package of chicken.
Add it to the gravy mixture. Pour this gravy mixture
over the drained cooked vegetables mixing well. Drain
some of the egg noodles and pat dry with a paper towel.
Heat a big cast iron skillet with a little oil in it until
hot! Add the drained dried noodles and fry quickly for
pan fried noodles. Stir and turn nearly constantly
using a metal egg turner until brown or as you like.
Serve the chow mein over the pan fried noodles.
Delicious!
A meal in itself!
Only a beverage is needed
and dessert if you like. Note: Chicken can be omitted
for a vegetarian dish. Gravy can be any flavor want.

breasts and/or thighs to be
used for;
Barbeque, Chicken & Dumplings or just Chicken.
Cover chicken pieces with salted water in a 2 qt glass
mixing pitcher bowl. Add pepper and onion seasoning if
desired. Cover with plastic wrap leaving a small vent
at lip of pitcher bowl. Cook 45 mins in microwave for
4 pieces. For meals; For barbeque place chicken pieces in
casserole dish. Cover with sauce (homemade or store
bought) and cook in microwave for a few minutes. Add
baked potato, greenbeans and/or salad and dessert. For
dumplings, use the broth to cook canned biscuits
(flattened, peppered and torn apart) in. Heat the broth
to boiling, drop in the "dumplings" and lower heat.
Cook for 8-10 minutes. Add a can of cream of chicken
soup to dumplings just before done. Add a salad, french
bread and dessert.
Nice quick meals.

Quick mini taco/hamburger/bean meal
(Very good)
1 lb hamburger meat
salt, pepper and onion powder to taste
1
pkg taco seasoning
1 can refried beans
flour tortilla's cut in triangles
lettuce and tomato cut up into small pieces
grated or sliced
cheese
Thick and Chunky salsa
Fry hamburger meat in skillet until brown, drain and
blot out grease with a good paper towel. Put in
microwave in a 2 qt casserole dish with taco seasoning
mixed according to package. Cook about 8 minutes in
microwave. Add 1 can refried beans and mix well.
Sprinkle cheese on top. Fry tortilla triangles in hot
oil until crisp. (These cook very quickly)
Serve as separate dishes to be put on plate and eaten
together. Hamburger mixture can be spooned on the
tortilla triangles and ate with the tomato and lettuce.
Put salsa on the lettuce, tomato and the mixture as
desired. Very good and a quick meal. Add a dessert.

Quick hamburger meals for one or two
2 hamburger patties seasoned well with pepper, salt,
garlic and onion powder.
Fry in small cast iron skillet. Brown fast on both
sides then turn burner on slow and cook until well
done. While the patties are cooking, wash, dry and
pierce with a fork one or two med size potatos. Put on
a paper towel and cook in microwave for 4-6 minutes for
1 potato or 8-10 min for 2 potato. When done split in
two and place cut side down in skillet where hamburger
patties have just been fried. Put a slice of cheese on
each patty. Place hamburger buns on top of meat
and cheese. Add a salad and dessert and you have a
quick meal! If you have leftover pasta such as macaroni
shells, it can be stirred around in the skillet where
the patties are cooked instead of baked potatos. If
used this way, you could just use the patty as a meat
dish and serve
a salad and dessert.
