Pineapple Dream Cheese Cake

1 (12 oz.) can evaporated milk
1 (3 oz.) pkg. lemon jello
1 (8 oz.) pkg. cream cheese
1 (8 oz.) can crushed pineapple (drained)
15 whole graham crackers
(approx. 1/2 the box)
2 Tbls. confectioner's sugar
1/2 tsp. cinnamon
1 stick (1/4 lb.) butter or marg. (melted)
1/2 cup granulated sugar
2 tsps. vanilla

1.) Chill milk overnight
2.) Add 1 cup boiling water to jello & set aside to cool.
3.) Crush graham crackers; add confectioner's sugar, cinnamon, & butter.
Pat into bottom of 10x14 inch pan; reserving 3-4 Tbls.for garnish.
4.) Cream together cream cheese & granulated sugar; add vanilla.
5.) In another bowl (large): Whip the milk until stiff; add jello and whip again (about 1-2 minutes) until jello & milk are well mixed.
6.) Add together cream cheese & milk mixtures, beat until smooth; stir in pineapple.
7.) Pour into pan & sprinkle with reserved graham cracker mixture.
8.) Chill about 5 hours before serving.
