I came across this last year, tried it and it was a big hit!! So I decided to make it again this year.
Wonderful side dish!

Sweet Potato Gratin

3 lbs sweet potatos, (about 5 large)
1/2 butter or margarine, divided
1/4 cup plus 2 tbls brown sugar, divided
2 eggs
2/3 cup orange juice
2 tsp cinnamon, divided
1/2 tsp salt
1/4 tsp nutmeg
1/3 cup flour
1/4 cup uncooked old fashioned oats
1/3 cup chopped pecans or walnuts

Preheat oven to 350 F.
Bake sweet potatos until tender, about 1 hour.
Cut hot sweet potatos lengthwise and remove pulp into a large bowl.
Beat 1/4 cup butter or margarine and 2 tbls brown sugar into potatos until butter or margarine is melted.
Add eggs, orange juice, 1 1/2 tsp cinnamon, salt and nutmeg.
Beat until smooth.
Pour into 1 1/2 quart baking dish, smooth top.
For the topping, combine oats, flour, remaining 1/4 cup brown sugar and remaining 1/4 cinnamon into med bowl.
Cut in remaining 1/4 cup butter or margarine until mixture is crumbly.
Stir in nuts.
Sprinkle over sweet potatos.
Bake about 1/2 hour or until heated through.
If desired, you can broil for a few minutes to get a nice crunchy topping.

Now you can assemble this recipe and refridgerate, covered, over night. Allow to stand for an hour or so at room temp before baking.
