Bread and Butter Pudding

6 slices of buttered bread
2 eggs
2 tbls sultanas
1 tbls sugar
2 1/2 cups of milk

Cut bread slices into 4 strips and place in layers in a buttered pie dish, with sultanas sprinkled between layers.
Beat egg with sugar and stir in milk. Pour over bread and allow to stand for 20 - 30 min.
Place on baking tray and bake in moderate oven for 1 hour or until custard is set and pudding is puffed and golden.

Rice Pudding

2 tbls rice
1 tbls sultanas
2 cups of milk
1 tbls butter
1 tbls brown sugar
grated nutmeg

Wash rice and put in buttered pie dish with milk. Leave to stand for 1 hour.
Add sugar and sultanas. Cut butter into pieces and dot over top of milk, add a little grated nutmeg to the surface.
Let the pudding cook slowly in a slow oven for about 1 1/2 hours.

Steamed Date Pudding

2 cups of flour
2 tsp cinnamon
pinch of salt
1 tsp mixed spice
30g butter
2 cups of milk
500g of dates
2 tsp bicarb soda
1/3 cup sugar
2 tbls vinegar

Sift flour and salt, rub in butter until mixture resembles fine bread crumbs. Add chopped dates, sugar and spices.
Bring milk to the boil add quickly bicarb soda and vinegar. While still frothing quickly stir into dry ingredients, mix well.
Pour into a pudding basin, cover and steam for 2 1/2 hours.

I do like a little bit of butter to my bread.
