125g butter
2 tbls sifted icing sugar
1/2 tsp vanilla
1/2 cup Self RAising flour
1/2 cup of corn flour
Cream butter and sugar, beat until light and fluffy add vanilla.
Fold in sifted flours. Roll into small bowls. Place onto trays and
press down with a fork.
Bake in a moderate oven for 30 min until a pale golden brown.
Ginger nuts
125g butter
2 cups of Self Raising flour
1 cup of sugar
3 tsp ground ginger
2 tbls golden syrup
1 egg
pinch of salt
Melt butter and remove from heat, add sugar golden syrup and beaten
egg stir until mixed through.
Sift flour into bowl add ginger and salt. Pour wet mix into bowl and
mix until combined.
Allow to cool and roll teaspoonfuls of mixture into balls. Place well
apart on lightly greased tray.
Bake in moderate oven 12 -15 min until golden brown.
Chocolate Drop Cookies
125g butter
1/4 tsp salt
1/2 cup of brown sugar
1/4 cup of cocoa
1 egg, lightly beaten
2 tbls honey
2 tsp honey
2 tsp vanilla
1/4 cup of milk
1/3 cup of plain flour
1 cup chopped peanuts
2 tsp baking powder
Cream butter and sugar. Add egg and vanilla, fold into sifted flour
alternately with honey and milk.
Add nuts and mix. Drop mixture from a teaspoon onto a greased baking
tray.
Bake in a moderate oven for 10 min.
