This is another Southern recipie that is served in many homes and restuarants of the deep South. I have had many people wanting and asking me for the recipie for Hush Puppies, so with the placing of my recipies on my site I have included that one in this grouping. These recipies will be changing regularly and are my own collection of things I cook, or have cooked for my family and friends, so if you cook or just love good food, you'll want to "bookmark" my site and return again and again to see what else I have placed here from my personal collection.

Hush Puppies

1 Cup of yellow cornmeal

1/2 Cup of all purpose flour

2 1/2 Tsp of baking powder

1/2 Tsp of salt

1 Egg

1 Tsp of sugar

1 Cup of milk or buttermilk

2 Tbsp of grated onion

Dash od red pepper, this is optional

Shortening, Vegetable oil or corn oil, or Lard for "deep" frying


Combine all the dry ingredients in a mixing bowl and blend well. Add egg and enough milk to make a thick batter. Stir in the onion and pepper. Drop by the spoonfuls into the hot skillet and brown on both sides, turning once. Drain for a few moments and then serve.





Chicken And Rice Stew

1 Whole chicken breast, or whole chicken cut up or not cut up chicken parts can also be used to make this. If you are using anything but Chicken breast in this recipie you'll need to at least triple the liquid indredients and double everything else

3/4 cup of water

1/4 cup of rice

1/4 cup of diced carrots or cut green beans

1/2 cup of milk


In saucepan cook chicken breast in water, covered until it is tender. Take the chicken from the broth, remove the chicken from the bones and dice up the meat. Add the above listed ingredients to the broth. Cover and cook until rice and vegetables are tender. You can serve and eat as is, or puree the mixture serve while warm or ither freeze it.
