SSJ
This stage is what many saiyans reach. They need to be pissed off, and a huge tradegy just happened, for ex. Goku turned when Krillin died. But in some cases, like when Chibi Trunks and Chibi Goten turned, they didn't need to be very mad. The saiyans' hair turns gold and the muscles turn bigger, their powerlevel and speed greatly increase. Characters may also reach Ultimate Super Saiyan, like Trunks did against Cell, you're muscles grow big, you become strong, but slow.
Characters who reach SSJ: Goku, Gohan, Vegeta, Future/Chibi Trunks, Goten, Brolly
SSJ2
SSJ 2 is not much different form SSJ, you just have blue lightning going around you. It is first achieved by Gohan, when Cell stepped on and crushed Android 16's head, and triggered Gohan to release his hidden power, and become SSJ2.
Characters who become SSJ2: Goku, Gohan, Vegeta, Goten, Trunks, Brolly
SSJ 3
SSJ3 is the stage where a saiyan grows golden hair down to his knees. He becomes stronger and faster, without growing bigger muscles. Goku is the only one to achieve this, he did it after he was killed by Cell, during a self-destruction, he was training so hard he turned, this stage is only achieved by training hard, doesn't matter if you're mad.

SSJ4
This stage is the final stage of a saiyan, besides rumors of the SSJ5 (pic below). Goku achieved this when he was in Golden Oozaru mode, adn he saw Pan crying. Vegeta achieved this by Bulma making a device that allowed him to skip SSJ3 and go on to directly SSJ4. In SSJ4, the saiyans' tail grows back, hair turns black, and grows fur around the chest area.
