the Krazy Korean's Spicy Potatoes
this can be either mild, peppery, or spicy hot depending upon which ingredient(s) you increase or decrease or delete for that matter

the Main Ingredients

Potatoes...(would you have ever guessed that one?)...the critical choice here is the kind of spud you decide to use...the recommended choices are russet (if you're looking for one that will soak up the juices and provide a strong hearty flavor...or white potatoes, which would not soak up as much and as thoroughly, but give more of a 'lighter' taste...recommendation is that you use about 1-2 potatoes per serving needed (this dish is an excellent leftover that you can nuke the next day and can also be served on top of a bed of rice...yes, starch on starch...)

Onions...about half an onion per serving and again you have a choice between a yellow or white onion, with the white onion giving a little more of a bite to the overall quality

the Other Stuff...the following items are set up for 3-4 servings (about 5-6 potatoes)
Garlic...the more the better, chopped
Black Pepper...the more of this the more BITE it will add to the dish, about 1 tsp for 2 potatoes (adjust to your personal preference)
Soy Sauce...1/4 cup
Water...1 cup
Sesame Oil...1/8 cup
Green Onions...1 bunch
Mushrooms...8 oz (optional)
Cilantro...a handful of tops
Chiles...1-2 peppers, serrano chiles are preferred (also optional)

Let's Cook It

Peel the potatoes and cut up into bite size pieces
Cut the onions into eight wedges, then cut the wedges in half
Strategically place these items into a baking dish, something of a 9x9 with good depth
Take the green onions and chop up the green part into 3/4" lengths, spread them over the potatoes and onions
Take the cilantro, chop and spread them too
Ditto on the mushrooms
The chile peppers chop finely finally and spread
Take the water, soy sauce, sesame oil and mix thoroughly...then pour this solution to bathe the potatoes and onions
Sprinkle the black pepper

Did you remember to preheat the oven to 350F?
Cover lightly with foil and place in middle rack...depending on the consistency of spud you desire, it will take about 30-45 minutes...suggest that every 10 minutes you move the potatoes around so that they are able to soak fully in the bath you have prepared for them.
