Afternoon Tea Class...
This is another
favorite course , we will cover the art of serving a “proper”
cup of tea with the preparation of all the required accompaniments,
such as scones, delicious tea sandwiches, fruit and clotted
cream. We suggest that you bring your favorite China tea
cup to this class. Bring your mom and qualify for our
special two for the price of one.
Appetizers...
Come prepared to learn how prepare and serve a wide assortment of appetizers for entertaining friends and family. This is a fast moving class but we keep the group fortified with frequent tasting's throughout the class.

Appetizer preparation
stressing creativity in cooking and presentation, this
class gives students the opportunity to prepare hot and
cold hors d’oeuvres.

Basic
Techniques of Cooking Level I...
This is our most popular series course which we conduct
all year round. This course is for the beginner in the
kitchen or for the seasoned cook who wants to learn the
proper techniques. This is a part course and is organized
as follows:
Part 1: Introduction—students are taught the basics of knife skills, cooking terms, mis
en place as we begin “hands on” training.

Part 2: Sauces and Stock Making. The chef will teach the students the step by step procedure stock which is the basic ingredient in many sauces. The students will also prepare a
Hollandaise, Gazpacho and a classic French Onion soup. The students will also be introduced to baking as rolls are prepared to serve with the soup.
Part 3: Cooking with meat, poultry and fish.
Building on the skills acquired during the first two weeks,
we then cover the proper techniques for buying, preparing
and cooking meats, poultry and fish. Students will prepare
steak, lemon chicken, fish in parchment paper and grilled vegetables.
Part 4: Introduction to Baking and Desserts. The students will select some of their favorite desserts to prepare.
Here we cover the basics involved in baking which is less forgiving than other types of cooking since so much precision is involved in measurement of the ingredients.
Brunch Class...
Here is a favorite pastime and the opportunity to have a leisurely day while eating some of your favorite brunch foods, omelets, quiche, scones, soup and miniature tasty desserts. Great for those who find themselves doing a lot of group entertaining.
Brunch Entertaining...
This is a
special “hands on” class with emphasis on the preparation
of an elegant brunch consisting of techniques of the preparation
of egg dishes, soufflés, quiches, and crepes. Bring your
mom to this class.

Here is where we
get a chance to "kick it up a notch" as we prepare
Spicy Gumbo, tasty Shrimp and Chicken dishes and an introduction
to Mr. Pernod.
Classical Cusines French and Italian...
Here is an intense two session course where we cover the basic techniques unique to French and Italian cuisines. Learn the basic of sauce making so critical to each of these cuisines and many other tips to great food preparation as we enjoy two typical dinners.

this three week series we will cover three dinner parties
featuring Italian, French and Spanish cuisine. Learn the
techniques peculiar to each of these cuisines.
Cooking
With Wine...
This is one of our most
popular classes. This class deals with the use of wine in
cooking appetizers, soups, entrees and desserts. Tips and
pointers will be provided in the selection of wines for cooking.
