RIESKA
Finnish Flat Bread
- 3 c. White flour
- 2 c. buttermilk
- 1 1/2 c. whole wheat flour
- 1/4 c. sugar
- 3 tsp baking powder
- 2 tsp. salt
- 1 tsp baking soda
- 1/2 c. shortening
Sift dry ingredients together. Cut shortening into dry
ingredients until mixture has a coarse crumb texture.
Add buttermilk and stir until dough clings together. Knead on a
lightly floured board for several minutes. Roll into a round,
flat loaf to fit an ungreased cookie sheet or pizza pan. Prick
entire surface with a fork. Bake in a preheated 350 oven for
approx 20-25 minutes, until golden brown.
Great with stew or chili!
