~MY FAVOURITE RECIPES~





                  I love to cook! Unfortunately, I also love to eat my cooking. My grandmother used to say that she would like to cook in the kitchen of a big hotel. I feel the same way, but I think it would also be nice to own the hotel. I have included a few of my favourite rcipes in these pages, but I have many more, some of which I will add as time allows. Since I live in a fishing village, we eat a great variety of seafood, and I have included several extra special seafood recipes. If you have any questions, please email me.

          HORS DOEUVRES

          WATER CHESTNUTS WRAPPED IN BACON



          Marinade
          2 T. brown sugar
          2 t. ginger
          Soya sauce to cover.

          Stir ingredients together, add one large can of water chestnutd, drained. Marinate at least 8 hours. Wrap in bacon and broil.





          MUSHROOM BACON ROLLUPS


          Fry 6 - 8 slices bacon very crisp and crumble.
          Saute 1/2 onion.
          Add 6 -8 mushrooms, cut very small.
          Add 1 80z. pkg. cream cheese, softened, and mix together.
          Roll crustless bread flat and spread mixture on each piece. Cook at 350F until golden brown.


          MEXICAN DIP



          8 oz. cream cheese
          1/2 cup sour cream
          Beat these two ingredients together to remove lumps.
          Spread in a 9 x 13 pan and top with the following:
          salsa
          finely chopped onions
          grated mozarella
          finely chopped green pepper
          finely chopped seeded tomato

          VEGETABLE DIP



          onion flakes
          8 oz. cream cheese
          1 cup Miracle Whip
          1/2 cup ketchup
          1 t. garlic salt
          1 to 2 t. worcestershire sauce
          4 drops tabasco sauce
          Beat and chill.






          CASSEROLES


          HING HAM GOULASH


          Preheat oven 325-350F
          1 large onion
          6 slices bacon
          1 lb. hamburg
          salt & pepper
          2 tomato soup
          1 can consomme
          1/2 cup water
          1 t. sugar
          1 1/2 t. meat sauce
          1/2 t. thyme
          1/2 t. oregano
          Heat these ingrediensts all together.
          Cook 8 ozs. broad egg noodles.
          Mix noodles and sauce together and place in large 9x13 pan. Cover with grated cheese. Cook 20 mins. covered and 20 minutes uncovered (approx).


          CURRIED CHICKEN BROCCOLI CASSEROLE

          Preheat oven at 325F.
          2 pkgs. fresh frozen broccoli
          2 cans cream of chicken soup
          1 scant cup mayonnaise
          1 tsp. lemon juice
          1 tsp.-1T. curry powder
          4 cups cooked chicken, cut up

          Boil broccoli, don't overcook.Heat other ingredients. Line casserole dish with half. Top with half the chicken, then 1/3 the sauce. Layer the rest of the broccoli, chicken and sauce. Top with lots of grated cheddar cheese. Bake, uncovered 30 - 45 minutes.




          PIZZA CASSEROLE

          1 lb. hamburg
          1 large onion, chopped
          1/2 t. salt
          pepper
          10 oz. mozarella, shredded
          8 ozs. macaroni
          2 cans pizza sauce
          4 ozs. sliced pepperoni

          Brown hamburg and onions in frying pan. Drain off fat. Add salt and pepper. Cook macaroni and drain. Add hamburg and sauce to macaroni. Place in a large casserole dish in alternating layers of hamburg and macaroni mixture , cheese and pepperoni, ending with cheese on top. Bake uncovered, at 350 for approximately 20 minutes.
