BLUEBERRY CREAM BRŪLEE

INGREDIENTS

  • 410 g can pie apple
  • 1 cup thickened cream
  • 1 cup sour cream
  • ¼ cup soft brown sugar
  • ½ teaspoon ground cardamom
  • ¼ cup soft brown sugar, extra
  • crisp sweet dessert biscuits, to serve

    METHOD

    1. Brush six ½ cup-capacity ramekin dishes with oil or melted butter. Divide the apple evenly between each ramekin.
    2. Combine the thickened cream, sour cream, soft brown sugar and cardamom in a small bowl. Whisk all the ingredients to thoroughly combine. Spoon the cream mixture evenly in each ramekin.
    3. Just before serving, sprinkle each ramekin with 2 teaspoons of extra brown sugar. Toast under a hot grill for 3 minutes. Serve the Apple Cream with crisp sweet biscuits.
    4. Variations: Canned pie apricot can be used in placed of pie apple, if desired. Other spices, such as mixed spice or ground cinnamon, can be substituted for cardamom, if preferred.
