Build muscle with this tasty and very easy recipe, if you've never tried stuffed peppers before then you are missing out and this tasty recipewill make a great addtion to your nutrition plan.

3 tbsp Extra-Virgin Olive Oil

3 Cloves Garlic, crushed

6 Medium Zucchini, chopped

1 Medium Onions, chopped

18 oz Lean Ground Beef

1 Jars Pasta Sauce

1 Cup Canned Low-Sodium Great Northern Beans (rinsed)

6 Cups Baby Spinach

Cups Sweetcorn (optional)

12 Bell Peppers (red, orange, yellow or green)

12 Tbsp Grated Parmesan Cheese

First pre-heat your oven to 350. Add the olive oil and garlic to a medium sauce pan and place over a medium heat. Once the garlic has lightly browned add the zucchini and onions. Cook until onions are translucent.

Add the beef and mash it down and cook until it has browned. Add the pasta and mix it in with the baby spinach and beans. Turn the heat down low and let simmer for about 10 minutes.

While you are waiting, cut off the top of the peppers and romove the core white membrane and any seeds from inside them. Place the peppers into a baking dish and fill the dish with about inch of water.

Stuff each pepper with the mix, be sure to get equal amounts of meat and vegetables in each pepper. Place in the oven and bake for about 30 minutes. After 30 minutes remove from the oven an place 1 tablespoon of cheese onto each pepper and bake for a further 10 minutes. Serve and enjoy! 1 serving is 2 stuffed peppers.
