Along the Saffron Trail Harvesting Saffron in Castilla

If you're in Don Quixote country during the autumn season, don't miss the opportunity to watch the saffron harvest in the fields around the medieval city of Consuegra. Farmers work at a back-breaking pace in a frantic race against time to harvest the delicate stamens of the crocus blooms and process them before they get damaged. These bright-red stamens, once dried and packed, become the most expensive spice in the world – saffron! It takes nearly a quarter of a million flowers to produce a kilo of saffron but it is certainly worth its weight in gold. Spanish saffron is one of the most sought-after in the world and is exported to every corner of the globe.

The gorgeous purple crocus flowers bloom during this season, and provide a spectacular display across the fields but the saffron farmers perhaps hardly have the time or the luxury to notice them! Every flower must be picked by hand and the stamens removed very carefully so as not to damage or crush them. This is one of the few harvesting processes that are not automated and even the packaging is done by hand. Picking begins before dawn so that the heat and sun cause minimum damage. The stamens begin losing their bright color almost instantly and farmers must work at top-speed to ensure that the sun doesn't damage them before they can be safely dried and packed.

The Saffron and Rose festival is held in Consuegra annually to celebrate the gathering of this exotic and most valuable crop but it's not just all hard-work and slaving away under the autumn sun. Folk- dances, music concerts, cook-outs, great food and wine, picking-contests, parades and street entertainment and flamenco are also part of the event and they finally culminate in the crowning of the queen of the pageant. The festivities have become a television event which is watched world-wide by millions of viewers. Miguel Cervantes, the most celebrated personality of the region is honored with readings, plays and musical shows based on his inimitable characters Don Quixote and Sancho Panza. People decked out in costumes depicting characters from Cervantes' books are a common sight during this time.

Saffron is a staple spice in many Spanish dishes like paella and seafood, but it's also used extensively in cuisines all over the world since medieval times. French, British, Middle-Eastern, Indian and African cuisines all use saffron. The Spanish and other Europeans and Asians also use saffron in their sweets and desserts and its delicate flavor and color add a subtle dimension to any dish that it's added to.
