Blueberry Cobbler Who wouldn't want to indulge in this 100% natural, gooey dessert, full of delectably nourishing blueberries! Research on the benefits of blueberries has been overwhelmingly encouraging. Rich in anthocyanidins, blueberries are known to help improve night vision, and as an antioxidant, support eye health by reinforcing collagen structures of the retina. This is of particular interest for those women who might be candidates for macular degeneration or cataracts. In addition, blueberries are a good source of myrtillin (the French word for blueberries is myrtilles), a phytochemical that helps to regulate blood sugar. Ingredients: 3T organic butter, melted 1 cup unbleached organic flour 1/4 tsp salt 1 tsp baking powder 1/2 cup organic milk 1 cup dehydrated cane juice (sweetener) or turbinado sugar 1 T arrowroot powder 1/2 cup chopped pecans 1 cup water 1 - 10 oz package of frozen organic blueberries, thawed 1/2 cup dehydrated cane juice or turbinado sugar Mix 3/4 cup sweetener, butter, flour, salt, baking powder and milk together. Place blueberries in the bottom of a 9" pan. Sprinkle blueberries with pecans evenly. Spread dough over blueberries. In a small bowl, combine 1/2 cup sweetener and arrowroot powder. Stir in water. Pour mixture over the dough. Bake at 350 degrees for 45 min, or till dough is golden brown. Serve warm.
