Recipe of the week: Italian Tacos



Hello recipe lovers: I wanted to thank you all for your letters, comments, recommendations. One guest this week did ask me how I learn all of the recipes. In Italy, we needed to know how to cook by the age of 10.

It was difficult, but I did learn, because my mother and father went to work, while I went to school, and became a part time mom to my 2 siblings.

At the age of 16, I also went to work,and continued to be their part time mom. As you can see, it was important to learn how to cook. Then as years passed, I learned to do my own recipes by fooling around in the kitchen.

Today, people think I have studied in a school and got a degree, but no, friends, it was all out of survival I needed to know how to cook. Thank you for your curiosity,and I thank you for loving my web site.

Another visitor has asked me about Italian taco's,and the answer is yes, I've come out with my own version. It is not a hard recipe, so I do hope you enjoy this week's offering>

INGREDIENTS:

1 pound of ground meat
My home made Italian sauce
Lettuce
onions
Red peppers
Green peppers
Tomatoes
Banana peppers

You need at least 15 taco shells - and mozzarella to begin. My Italian sauce is already made before we begin this process, and a reminder on how to make it is in our first recipe, Click Here.

Also, because I care for my heart, I cook the ground meat in water for 35 minutes, no oil, no chemicals, just cook your ground meat in a pot full of water. Simple and easy.

Get a small pot, put 3 cups of homemade sauce in the pot and add: onions, cut red peppers, cut green peppers and cut banana peppers. Add 2 tablesppons of water and cook for 15 minutes.

You now have all the ingredients to begin our Italian taco's. Wait 5 minutes for the sauce to cool before we start.

Get your first taco shell and add 1 1/2 tablespoons of ground meat in your taco shell. Cut your mozzarella in pieces, put 2 pieces of mozzarella in the taco shell.

Slice your lettuce in small pieces-put some lettuce in your taco. Slice your tomatoes - put 1 or 2 tomatoes in your tacos along with the special sauce we have just made for our taco's. I put 3 tablespoons of sauce in each taco.

After all tacos are filled up, I put the tacos on a big tray and put in the oven, at 400 degrees, for 5 minutes. When done, I then let it cool for 5 minutes - and here you have it, ready to serve.

This is my quickest dish I have and the kids love it too, but when I do serve it to my child, I add one tablespoon of water in each taco, so it will not be too hot for the child.

A special reminder to my members. You can always add and subtract with my recipes to make it to your special taste. Some like it hotter, some like it milder. If you are prefer the milder taste, do not add banana peppers.

As I said, you can fix it to your own taste buds, that is how I learned how to cook and made special preferences. To the heart victims out there, you can eat also, but to make my sauce, I have one important ingredient that you need to leave out, since i always watch my heart, and that is: Do not add OIL. Just add more water, and you also can enjoy my recipes.

I will soon come out with my own recipe book, that you may purchase. It is still in the writing stages, but will contain my recipes, plus special desserts you may make for dinner, instead of buying them, straight from the oven. I will keep you posted on this project and let you know when it is published and ready for sale.

The ill person becomes easily depressed, what does the world expect of us? To get up, is that what you regret? We are not normal anymore, so shall find our corner and die there?

I don't think so. We have a right to live as we are not so different. So don't talk behind our back, we have feelings. Instead ask what you can do to make our day a little easier, and remember, we are not children, but real humanity pain,
