PANCAKES
BREAKFAST PANCAKES 1 1/2 cup milk 1 egg beaten 1 1/2 cup flour 2 Tbsp butter or marg 3 rounded tsp of baking powder 1/2 tsp salt 3 Tbsp melted marg or oil Mix alltogether in a bowl and leave it to set for a few min so it will thicken up a little.I have found this makes nice fluffy pancakes. Drop by spoonful or 1/4 cup measuring cup on a hot griddle sprayed with Pam. This should make about 11 or 12 pancakes. This is the receipe that I use for our Pancake and sausage breakfast at our club hall.(i do make this 5 or 6 times the receipe depending on how many are coming. POTATO PANCAKES 3 good sized pealed potatoes put through processor or grind fine add 1/2 tsp salt 1/2 cup flour 1 tsp baking powder Mix this together and if it feels to thick(if not enough moisture in the potatos) add a couple Tbsp of water. Drop onto a hot griddle about 1/4 cup sprayed with Pam. When the one side is browned turn the cakes over and serve with butter. My kids loved these for lunch or supper.
