Delicious Thai on the Island of Koh Ngai

Warm sun waits just beyond the shadows of the huge trees arching above us. The air has dried our skin following a swim through the crystal waters swirling around the colourful coral and darting fish. Relaxing on deck chairs and massaging sand beneath our feet, we contemplate Pad Thai and Chili Squid for lunch--extra chili please. The Thai chefs make everything a little tamer to cater to a western palate--still delicious though. This was our reward for having done something a little bit stupid: getting married at the government offices in Chiang Mai, Thailand. Tying the knot in a foreign country where the general level of English consists of such phrases as "Where are you going? Do you want a tuk tuk?" and "Do you want to buy a suit?" was a real challenge and lots of fun, but mainly in retrospect. The friends we made, the colours, the sounds, and the tastes will stay with us forever, we hope. Too much chili can never be a bad thing.
