Lita's Spicy Black Beans with Onion & Bacon

Ingredients

  • 2 & 1 half tablespoons chili powder
  • 1 fourth pound of bacon,chopped
  • 1 large onion,peeled & chopped
  • 2 large garlic cloves,peeled & chopped
  • 1 (4-ounce) can diced green chillies
  • 2 (15- to 16 ounce) cans black beans, drained & rinsed
  • 2 teaspoons dried oregano
  • 1 fourth teaspoon cayenne pepper
  • 1 (16-ounce) can diced, peeled tomatoes, undrained
    NOTE:Add salt to taste & freshly ground black pepper to taste

    Directions:

    1.Cook the bacon in a large, heavy saucepan over medium heat until light brown, about 10 minutes.
    2.Add the onion and garlic and saute until the onion is translucent, about 5 minutes
    3.Add all the remaining ingredients. Simmer until the mixture is thick, strirring freqently, about 12 minutes.
    4.Season with salt and pepper.

    NOTE! Makes 4 servings
