Strawberry Kiwi Flan

125ml sugar
4 eggs(room temperature)
175ml flour(sifted)
50ml butter(melted)
500ml lemon/vanilla custard
500ml fresh strawberries(slice)& kiwi frui(thinly sliced)
85g strawberry glaze

Preheat oven to 65c.
Grease and flour a 25cm flan ring.
Spread sugar on a banking sheet.
Place in oven and warm for 3 minutes.
Remove sugar from oven.
Increase oven temperature to 190c.
In a double boiler, combine eggs and warm sugar.
Beat with an electric mixer at medium speed until doubled in bulk.
Remove from heat.
Gently fold flour into sugar mixture.
Fold in butter.
Pour mixture into prepared flan ring.
Bake for 30-35 minutes.
Invent pan on wire rack.
When cool, remove flan ring.
Fill center of cooled flan wih lemon custard.
Decorate top of flan with strawberries and kiwi.
Brush flan with strawberry glaze.
Serve with ice cream or custard.
