Salad Greens With Pears, Fennel & Walnuts
This recipe was sent to me by a relative who found it on The MayoClinic Website. This recipe is suitable for diabetics and is 2 vegetable and 1 fat serving.
6 Cups Mixed Salad Greens; 1 Medium Bulb Fennel, Trimmed & Thinly Sliced; 2 Medium Pears, Cored, Quartered & Thinly Sliced; 2T. Grated Parmesan Cheese; 1/4C. Toasted Walnuts Coarsely Chopped; 3 tsp. Extra Virgin Olive Oil; 2T. Balsamic Vinegar; Freshly Ground Black Pepper
Divide salad onto 6 plates. Scatter fennel and pear slices over greens. Sprinkle with parmesan and walnuts. Drizzle with olive oil and vinegar. Add black pepper.
