Chocolate Rice Pudding
2 C. Water; 1 C. Uncooked Rice; 2 T. Butter; 1/4 C. Sugar; 2 tsp. Cornstarch; 2 C. Milk; 1/2 tsp. Vanilla; 2 Egg Yolks; 1/2 C. Semisweet Chocolate Chips
Bring water to boil in large pan. Stir in rice and butter. Reduce heat, cover and simmer 20 minutes. Remove from heat. Let stand until all liquid is absorbed (About 5 minutes.)
Coming sugar and cornstarch in bowl. Add to hot rice in pan. Stir in milk. Bring mixture to boil, stirring occasionally. Remove from heat, add vanilla.
Beat egg yolks in small bowl. Stir about 1 cup of hot rice mixture into beaten egg yolks. Stir egg yolk mixture back into remaining rice mixture in pan. Cook rice mixture over medium heat, stirring frequently, just until mixture starts to bubble. Remove from heat, add chocolate chips and stir until melted.
Spoon into serving dishes and chill. Makes 6 servings.
